Texas bbq in Colorado!!! This place has winning barbecue! The owner actually is from Texas and we were surprised by how good the barbecue here was! I have not been a lover of ribs but high country changed it for me – so so juicy and tender, just melts in your mouth! My typical order is a brisket and the brisket here was superb as well!
I’m prepared to drive from Denver just to have some good barbecue that I think Denver lacks.
Highly recommend checking this place out! Price point is great and food is extraordinary! Love it!

Visited here after a local pickleball tournament in Buena Vista. Absolutely amazing BBQ made fresh in the smokers next to the truck. Our sandwiches were packed with meat, way more than any other place I’ve been to in Colorado.

I’ve never been to Texas so I don’t know for sure, but this has got to be what they’re raving about down there!

Wanted to share my own experience on here after reading that others went through the same situation that I did.
We reserved high country bbq for our wedding, food for 165 for my ranch wedding. We visited the shop 12 months before our wedding to taste the food and put down a 50% deposit. Everything was going well and I was checking in leading up to the wedding.
The month before our wedding I was inquiring about finally details and he started acting very sketchy . I began to call and text several times a day because I got concerned. Finally seven days before our wedding he said he could not cater our wedding, leaving us absolutely scrambling to find food for a large wedding in a small town. We were able to find catering thankfully (huge shoutout to Stuboys bbq out of Littleton who I cannot recommend highly enough).

Regardless, we told John we would be needing our deposit back. He would reply occasionally with various excuses, saying he would mail a check, pay in installments, but we got nothing. Finally he stopped replying all together. So to this day we have not recieved the thousands of dollars we are owed, an apology for leaving us scrambling or anything. But he has his read receipts on… so we know he’s seen our messages.

John catered for our wedding on May 23rd. The Family owned, authentic Texas BBQ atmosphere of this restaurant made it appealing to us from the start. The FOOD though is mouth watering good! All our guests were very impressed! You haven’t tasted real Texas in Colorado until you’ve checked out this place.

Please do not book High Country BBQ for your wedding. I paid for them to cater my wedding, they never brought the food, never apologized, never issued a refund.

EDIT:
Since the owner decided to leave a false reply to my review, let me be clear. I ordered food for 65 people, as I am finishing up my ceremony, I am told by family that High Country BBQ never showed up with the food. We called them and they said they weren’t bringing it, no apologies, no refunds. I’ve called three times trying to get a refund and two months later I’m still out over $1,000.

This is the perfect Texas BBQ. Ribs are fall off the bone, smoky, great flavor. Brisket is nice and juicy. The chopped brisket had the perfect mix of tender pieces, fatty bits, and crunchy smoked bites. The pulled pork was also great and the BBQ sauce was perfect on everything. The cowboy beans were so good, cooked well, great spice. Really it was even better than I was prepared for. They came up to delivered to us at mt Princeton Hot Springs.

My husband and I know good barbecue. We’re from Texas! The brisket we had was some of the best ever! Moist, fat on it for flavor and no need for a knife! Can’t wait to try the ribs. The owner said he cooks his brisket for 20 hrs. Highly recommend!!

If you need a big dinner or passing through town, this is a must stop!

Stopped in after a long day in the mountains, and was ready to eat. Got there later in the day, so a few items were sold out – no big deal! I got the one meat plate (brisket) and a side of coleslaw and potato salad. I lived in Texas for over 8 years and this is the best BBQ I’ve had outside of Texas state lines. The brisket was juicy melt in your mouth good (both BBQ sauces were amazing too – I mixed them together) the sides of coleslaw and potato salad were so good and reminded me of some great southern cooking!

The meats are pretty good, but need more sauce options. The seating area is okay, but rustic and a little rundown. Their sides are very good, especially the cowboy beans. Price is a little high, but it is a distant location and everything is pricey up there. Overall, it is a worthwhile place to eat, with an interesting vibe. The owner/staff are very friendly, and want you to have a good experience.
