This is a novel American bistro with yummy options. Bowl was delicious and had good balance of flavor, except that the quinoa was a bit bland; adding lemon juice brightened the flavor and really brought it to life. The whipped tahini was fire (not spicy fire, good fire). The lemon bar was yummy and tart. Don’t forget to get some cornbread– it’s incresible. The bacon jam on the cornbread was a bit oily, which I don’t think is a necessary evil for a spread like this. Great service, and overall a great joint.

Stopped into eat while visiting, needed an escape from the heat and was very happy to sit inside with air conditioning, however there was plenty of shaded outdoor seating as well. The menu looked incredible, our server was friendly and helpful. The restaurant was clean and eclectic. The food was absolutely mouth watering with generous portions.
Would definitely come back again!

FINALLY!! Cornbread in Colorado like authentic Southern skillet bread…but better. Mingled with chiles, corn, and a side of fresh strawberry jam, it had a perfect moist texture with crispy black skillet crust and sharp cheddar on top. I also loved the pepper-jack, burger and jam grilled cheese on fresh homemade bread. My friend had the brisket sandwich and fresh cut fries. Our first experience proved there are lots of restaurant choices on Pearl Street—High Country needs to be at the too of the list. Laid back, friendly, indoor/outdoor seating, and from scratch cooking. (Sorry we ate all the cornbread and half my melt before thinking to snap a pic )

My most recent visit to High Country found me devouring the Summit Bowl with the chicken option (avocado, mushrooms, shrimp and/or salmon are all additional options if one chooses). I apologize for the picture as it is half eaten before I thought to take it (too delicious to stop after one or two bites). Mike was kind enough to recommend this dish to me.
Highly recommend our new restaurant – don’t forget Gemini next door (Same management)!!

Very tasty food with heartfelt and warm service. You can tell the owners really care about creating a nice experience. The vegan garden burger was satisfying and we enjoyed the summit bowl. Fair price as well. The place is huge and even able to accommodate big groups. We’ll definitely be back

Great addition to Pearl St! Delicious comfort food and great mocktail options which I really appreciate. Our server(wish I remembered her name!) was friendly and attentive. The Summit Bowl with chicken and avocado was very flavorful, would definitely get it again. Finished the meal with a slice of carrot cake, the icing was especially delicious! Will be back and want to try the wings next time

Stopped in to try their Golden Hour for a $4 draft beer and an appetizer.
WOW! I had the hippie dip and it was healthy and tasty. Then decided to try the potato cauliflower soup and loved it! Highly recommend. Great value and location.
Staff was friendly too.

Went here for lunch with my wife yesterday afternoon. The whipped goat cheese was amazing. The smoked pork sandwich was a bit difficult to eat with your hands and was heavy on the smoke, but still had a good flavor. The Mac and cheese side was excellent. Also, I had a refreshing irish whiskey cocktail with blackberry. I can’t remember the name of it.

My favorite restaurant in Boulder!
Their cocktail menu is excellent. The skillet cornbread is so good I got seconds the first time I went. The food is always wonderful, and the menu ranges from casual sandwiches to great New American style cuisine. High Country is my go-to for happy hour and special occasions.

This is an understated little restaurant on the Pearl Street Mall. Laid back vibe with good food and friendly service. And the price was reasonable. The Mile High Burger was delish, piled high with all the fixin’s and the flank steak with chimichurri was cooked perfectly with roasted broccolini and new potatoes that were amazing. If you get to the mall, skip the uber busy joints and head for High Country!
