I enjoyed an afternoon, happy hour, beer and appetizer on the bar side. It was quite enjoyable, and the service was great. It is so much fun to go into places that have so much rich, character, and tradition, and they don’t try to update and change everything into modern decor. This place so much reminds me of going to dinner with my grandparents when I was a child. Coming from a German background, I can say that the food looks very authentic. I can’t wait to go for a nice formal dinner here sometime soon.

Almost didn’t want to write a review because this place feels like a gem. Some of the best service I’ve ever experienced in any restaurant (shout out Maddie) and some incredibly well cooked and prepared cuts of meat. It quickly became one of my all time favorite restaurants after moving to Everson. The atmosphere is timeless and cozy. There’s plenty of seating and having the bar and dining area separated is great for having a date night or just a good time out. The food is consistently great and the service is some of the best you can find (county or city).

Finally, a good German place! Schnitzel was light and fluffy. Potatoes are perfect. A sauerkraut that is actually done right. Nice atmosphere. Well stocked bar with plenty of selection. Staff is nice.

We love eating here when we have the opportunity, usually it’s for a special occasion for us. Last time we were there was new years eve and the staff are always friendly and helpful, even though it was a super busy night. Danielle was our server and was amazing! Food is always cooked to our liking. I usually order the chicken cutlet with spaetzle and the cream sauce and it’s so delicious. I cannot recommend them enough.

Went on a Saturday night, huge mistake!!! Don’t go on Saturday night unless you want for 2 hours. We waited a VERY long time for our food. Owner’s attitude was very disappointing. No “Im sorry or what can I do to make things right”. As a former restaurant owner, shame on you! She really didn’t seem to care we were not happy.

Another banner meal at Herbs. Took my daughter from Colorado here as her last (and best) meal before returning home. She was always a picky eater as a child (she’s 33) so I was expecting her to complain, but she absolutely raved about everything we ate. Hubby is on a sodium restriction so John in the kitchen made his filet special. I had salmon again bc I love their salmon, veggies perfectly cooked and yum their potatoes! Although after tasting my daughter’s chicken spaetzel I may have that next time. We have been here numerous times and can honestly say we have never been disappointed. Two drawbacks, I was designated driver so I couldn’t have their spiked lavender lemonade and theyran out of dessertbecause it was so busy (on a Tuesday) except for the creme Brule which happens to be my dessert of choice anyway lol so we all had that. Really can’t say enough good things about the owners and staff. Ready to go back again!

Haven’t been around Everson for about 10 years (aka the last time we went to Niemanns) Food was as good as we remembered! Had the Jaeger schnitzel…it was wonderful!!! The red cabbage side was better than any we’ve had before, which would include our visit to Germany. Schnitzel was served over spatzle with a delicious sauce. Portion size was generous, and very reasonably price. Also included was a Cesar salad. Small, and very popular restaurant (has fabulous steaks also!) so reservations are a good idea. Will be heading back that direction in a couple of weeks, so will be making a return visit. BTW, the servers are a great!

Disappointing. We’ve been coming to this restaurant for 20 years and I’ve always described them as being the best steak house in Whatcom County. Unfortunately that has changed. I had the bar steak. My wife got the weiner schnitzel and we ordered the escargots for an appetizer. The escargots have always been our favorite, but they were completely different than what we’ve had in the past. They were even different from what was described in the menu. They used to be in a very tasty butter sauce with a crispy puff pastry over each escargots. The type of sauce that you want to soak up every drop with the yummy bread. This time they were smothered in some type of cheese sauce. The entire plate was covered with cheese sauce and the puff pastry was buried underneath and soggy. Not good. My steak was cooked as I asked but not the quality of past visits. It was mushy and chewy. My wife’s schnitzel was tasty but don’t put the compote on top of the schnitzel. It should be on the side. All it did was make the schnitzel mushy. Finally, her green beans were like spaghetti noodles. The taste was good but just a pile of mush. The potatoes were good but they used to be thinly sliced potatoes. Now they are more like cubed. Still taste great, I just prefer them sliced like scalloped potatoes. They hold their firmness better. I’m not trying to live in the past, but I do feel things have gone downhill a bit. I know this review will be frowned upon because the restaurant is a county favorite. I’m just being honest, and maybe they were just having a rough Saturday night.
