Great vibe, cool space, and high-quality food. Definitely coming back.
We have eaten in, upstairs, which will be so fun this summer, and taken it home. I recommend both but once it warms up you will definitely want the party atmosphere of dining in. Great for families, groups, or just you.
Walking upstairs, I had a little flashback to Houston’s old Cafe Adobe. Love the vibe up there. I feel like telling all the Oly natives to run and support this ACTUAL Tex-Mex taste. I’ll definitely be doing so.
First off, don’t sleep on the Tejas Trio or salsas! I spent years working in restaurants from serving to managing and the amount of time and care if takes to prep and provide fresh ingredients and food that great is no small feat. Props to the staff running the kitchen and those front of house who greeted me with such kindness every visit. Y’all are rockstars!
In college, I lived on breakfast tacos and experiencing the nostalgia I felt eating at Hector’s was so sweet. You can genuinely feel the care that has gone into the food and space, and the vulnerability of putting family recipes out there for anyone and everyone to critique is not missed on me. Bravo to the owners for sharing with us, as it is a genuine privilege to get to enjoy what has been passed down for so long.
Hector’s is such a win for Olympia and I can’t wait to bring my kids and husband when we visit the PNW next!
My husband and I have been here a handful of times already so we’ve almost tried everything on the soft opening menu. The tacos are SO good, the homemade flour tortillas are chef’s kiss and the quessssoooooo. I dream about it!
The prices are incredibly reasonable for what you’re getting. Everything is locally sourced and handmade-from-scratch. A single taco at Chipotle costs $3.75 so Hector’s pricing is right in line, except you’re getting Heritage Meats chorizo, local cage-free eggs, homemade flour tortillas made fresh daily, and everything cooked with quality ingredients like avocado oil and butter instead of whatever’s cheapest.
I’d much rather spend my money supporting a local restaurant that sources from local butchers and makes everything from scratch, than paying the same amount (or more!) at a chain. Clearly I am a big fan of Hector’s!
The care and quality is evident in every single bite. Can’t wait to come back! Especially in the summer, oooo it’s gonna be glorious in that upstairs area.
The tacos- we got all 5 of them. The flavor is almost there, but the texture and the presentation was just. Sad. Home made tortillas, but the tacos are pre made and put under a warmer. This takes what could be delicious, soft, pillowy tortillas and makes them have the texture of playdough. They lose all flavor, and have an unpleasant damp gumminess to them. The tacos are given to you rolled up, like an aluminum foil tube. People eat with their eyes- and the tacos are presented like a sad school lunch. It all tasted like something I meal prepped at home, pulled out of the freezer and microwaved. I go to a restaurant for hot, fresh, just made. This was like… getting something at the safeway deli.
I also take a huge issue with advertising having the dressings on their menu- but then not actually having it yet. We asked for Chipotle ranch and they didn’t have any.
The good points- the queso was delicious. And god, if they made fresh tortilla chips? I’d be here WAY too much. The tortilla soup was also good.
I see the potential, I want this place to be good. But I won’t be back. If they took more pride in the presentation of their food- presentation that also just destroys the textures- I’d be back, for sure. The vibe upstairs is cool, and I love the affordable price point. The tortillas just need more respect and love.
First of all, the atmosphere. This place is giving more “food truck with a patio” than “restaurant”. Everything is essentially outdoors. You order outside (in the rain) then you go “inside” and it’s not enclosed nor climate controlled. Upstairs is another nicer seating area, but still not really “indoors”. We were not prepared. Don’t head upstairs too quickly though, because the food pick up is downstairs at a window. There’s a lack of labeling in general in the space so we did have to ask questions to understand what was where. I will be surprised if this restaurant can survive a winter in Olympia without a truly indoor space. Olympia needs more Mexican food, but this climate is not the same as down south.
Second, the food. This was the best part. We tried almost all of the tacos and they are all delicious. The Tejas trio was good too, but we had to ask for more chips and the price felt a bit steep. There was no hot sauce or salsa available, which would have really enhanced our experience. If it was on the menu it was something we missed while trying to plan our order out in the rain. The coffee was better than I expected, but it was served in 8oz cups. I get that it’s refillable but I don’t want to walk up and down the stairs every 5 minutes to refill a tiny cup. The only other breakfast joint in Oly that I know of with 8oz coffee cups is Biscuit House and their coffee is free so I can understand. For $3, I expect a full sized (16oz or larger) coffee cup. Even better would be actual ceramic mugs and a carafe available upstairs.
Finally I’ll touch on family friendliness. I don’t really think kids are in the target audience for this place. They have high chairs available, but it’s not a super comfortable place to sit and eat. They’ve got a small menu, so I can understand having no kids menu for now. In the future though I think it goes a long way to offer a kids menu even if it’s just suggestions off the regular menu on a coloring sheet.
With that I’ll say maybe I misunderstood this place and it’s not really for dine in. Maybe it’s geared toward take out? But if that’s the case, I don’t get it either. Are people actually ordering take out for breakfast?
We go out for breakfast quite regularly and unfortunately I don’t think Hectors will be a place we return to.
I’ve already been multiple times and it’s one of those places that just feels easy. The vibe is great, the music is always on point, and the space just feels good to be in. It’s the kind of place you can pop into for a quick bite or hang out a little longer and not feel rushed.
My order every time: bean and cheese tacos with a Topo Chico. morning or lunch. Two tacos are totally enough and they’re so simple but so good. Everything is scratch-made and you can taste the difference. Nothing tastes canned or heavy. The red salsa is my favorite — it has the perfect kick and epic flavor.
staff 10/10 – I am SO into great warm and welcoming staff. These guys hit it out of the park.
I also got to try the margarita (scratch-made!) and I cannot wait until it officially launches. It’s dangerously good.
It’s hard to find food that feels comforting but still fresh and not over-the-top greasy. Hector’s nails that balance. Easy grab-and-go, solid healthy-ish choices, but also feels a little indulgent in the best way.
This is absolutely where I’ll be living this year. Olympia needed this.
