Hatchet is FANTASTIC! We have been wanting to go here for years and finally decided to drive the 45 minutes to Richmond…it was so worth it! This is a super unique Asian-American fusion restaurant with some incredible options on the menu. Excellent gluten-free options and the pricing is good for the quality of food you’re getting! We got this very good mocktail with black cherry and orange and a bunch of other stuff in it – super good and highly recommended if you can find it on the menu! For food we got the umami black bean salt edamame, smashed cucumber, kung pao popcorn chicken, wafu crunch salad, and their Korean short ribs with squid ink grits. We also got the hot dog octopus for our 6 year old – they have a good kids’ menu!

All of the food was incredible – so many unique flavors in every bite!! Our top favorites were the kung pao popcorn chicken and the Korean short ribs specifically; however, we would order everything again. There are so many more good-looking options on the menu, you can come many times before you have tried all of what Hatchet offers! Plus, they own a creemee stand across the street with some very unique flavors (sometimes), so you can even great a signature Vermont dessert after your meal! Fantastic, 10/10 place – we will be returning!!

We came in after skiing for drinks and appetizers and Hatchet did not disappoint. The bartender, Henry, was amazing and knew exactly what we wanted. We got the mushroom bao buns, romaine salad, calamari, arancini, and beef stew for food. Everything was delicious!

I had heard that this place was really good, but didn’t have much sense of what to expect when my wife and I decided to check it out. Cocktails were excellent as was the food! The Asian fusion theme was unique and the atmosphere was hard to describe. Some combination of lumberjack, hipster, cosmopolitan chic. That probably doesn’t make much sense as you read it, so you’ll have to go have a look for yourself.

Hatchet has an awesome space, delicious food, and an incredible cocktail program.
Brussel sprouts were among the best I’ve ever had, and the katsu, pulled pork sandwich, and short rib ragu were all excellent. (Especially the ragu!)
The space is well-designed, with well-placed acoustic panels that keep the noise at a pleasant level and contribute to the consistent color scheme, and the “hatchet” decor is distinctive and memorable.
Staff were friendly, efficient and knowledgeable, and service was very quick.
Cocktails were creative and well-designed, with a range of flavors featuring a range of house-made ingredients and infusions.
I can’t wait to come back and try more from the talented team in the kitchen!

We had not visited Hatchet in a while and we’re happy to try their Asian inspired menu. Started with cocktail, soda, and low-alcohol beer. Quite happy with their wide, but curated options of beverages that anyone can enjoy.

For appetizer, we shared the crispy chicken bao (buns) with sticky honey lemongrass sauce, cucumber, pickled onion, cilantro, lime cabbage. Refreshing and light starter. The kid dinner options are Mac and cheese, butter noodles, popcorn chicken, and grilled cheese with choice of fries or dressed greens. Our daughter enjoyed the popcorn chicken and hand-cut fries.

I had the koji aged NY Strip steak, after my first choice the Gochujang lemongrass short ribs ran out. The NY strip was cooked medium and on top of tasty miso roasted broccolini, crispy smashed potatoes and pea shoots. My husband enjoyed bulgogi lettuce wrap, which he ordered beef but got chicken mistakenly and the staff corrected the meal with his first choice. Overall, delicious and flavorful. The waiter was kind enough to get us complimentary creemees from their shop across the street due to the order mix up.
Staff are pleasant and honor the time it takes to choose your drinks and meal as well as enjoy it. We appreciate they add in gratuity to ensure their staff are paid well.

Wonderful service. They had just opened a few days earlier for indoor service. Dinner companions said that the Beyond burgers and fries were fabulous. Special shout out to the Dirty Burger Cat Fries. The special: big plate of mussels was superb. I loved the spicy red curry with pork belly. Rice was a teeny bit underdone, but otherwise it was delicious.
All in all a great find! Will be back and highly recommend it for people in the area.

The food here is excellent. We split fried Brussels sprouts. I got a paella special that was excellent. It had that signature mix of seafood and chicken flavor. Girlfriend got a pesto Carbonara with peas and artichoke hearts. We split a mousse cake that was airy with a great chocolate flavor. The tap list here is amazing with various local beers . The beers are intermingled with some great other craft selections. Definitely recommend checking this place out.

This place was unique from the music to the food to the wallpaper. I really enjoyed the food and frankly loved the wallpaper. The cauliflower was so delicious. I chose the Korean BBQ with a side of ranch. The pictures of the food don’t do it justice.

Came here for a double date night. Last time I was here, it was a much diff vibe and diff food. Currently, the menu is very Asian fusion. Had the karaage chicken sandwich which also had kimchi and chili crisp, both Korean and Chinese influence along with the Japanese karaage. Sandwich was very good. Appreciated they used dark meat for the karaage. Most places in VT use white/breast meat for chicken sandwiches. So glad to see this place staying true to karaage and using dark meat. Would def come back and try out the other dishes.

Exceptional, vibrant, good vibes. The menu and beer list will make you second guess why you don’t live next door. I would’ve tried everything if I could. We had the popcorn chicken and arancini (a popular item) to start and strip steak and prok belly. Obviously coming back.
