Hatch Cafe and Bistro is one of those places that immediately makes you slow down and settle in. Tucked into two charming former homes it feels like a Hill Country escape even though it is just minutes from 281. We stopped in for brunch and everything delivered.
I ordered the breakfast sandwich with avocado bacon and eggs on a buttery croissant and paired it with fresh fruit. Simple on paper but executed beautifully. Every bite was rich balanced and satisfying. My husband went with the salad and it was genuinely impressive. The presentation was gorgeous and the dressing deserves its own spotlight. It was bold bright and absolutely addictive.
Their coffee also stood out. I still do not know where they source it but I will be going back to find out because it was smooth flavorful and memorable.
On the way out I grabbed a slice of strawberry cake and I have not stopped thinking about it since. Light moist perfectly sweet and honestly close to dessert perfection.
Between the cozy atmosphere the little outdoor library and the thoughtful details everywhere Hatch feels special. This place is a gem and I already cannot wait to return.

Hatch always wins!! Every meal we’ve had has been delicious & Valentine’s Day Breakfast was no different!
Their Hibiscus/Jamaica tea is always on point and so refreshing. I also had hot tea – raspberry pomegranate…it was so good I didn’t need to add sugar!
The coffee cake was wonderful. Satisfying but not too sweet.
Croissant with butter & strawberry jam…. it was delectable alone but the Jam & butter sent it to the moon!

A Bulverde staple. One of the few breakfast spots, and it’s usually open. All the breakfast classics you’d want, and done right. Pancakes, french toast, waffles, sausage, eggs, biscuits. Worth the wait on a Sunday afternoon. Menu prices aren’t updated, be aware of some variance from the printed menu and the itemized receipt. Baked goods are yum. If you need a cute gift to-go, they have some for you by the front entrance!

I’d been wanting to try this local bistro for a while, but it’s always busy whenever I drive by. This time, I finally got lucky—right between breakfast and lunch, there were only a couple of other guests. Our food took about 30 minutes to arrive, which felt a bit slow given how quiet it was, but it was absolutely worth the wait. Everything tasted homemade and full of flavor. Our waitress was very kind and friendly. The small building is charming, with both indoor and outdoor seating and even a little bakery inside. Definitely recommend checking this place out!

Everyone loved their food. Service was great, he never informed us of his name, but he did a good job.
We were there on a Sunday so had their weekend specials. The chilaquiles might be my favorite, both sauces are great, but I preferred the green over the red.
I didn’t get coffee, but everyone else did and raved how good it was.
I will stop by again next time in the area.

I haven’t eaten here in a while. They have added more areas to eat as they’ve gotten more popular which is nice. But the server still didn’t seem to be “present.”
I told him I didn’t eat pork, and he replied he could add ham instead. Ok…. I had to remind him ham is pork. They did substitute a chicken breast upon my request. I then asked him which of the two coffees had more foam (froth), and he couldn’t tell me. So I just went with the Americano.
The Sandwich and coffee were both good, but nothing out of this world. My suggestion is to educate your servers on menu items to better serve your customers.
I’ll be back because I love helping local businesses.
