People wait hours in the Florida sun for a cookie, and now I know why. Gideon’s Bakehouse isn’t just a bakery; it’s an experience!

The story is as rich as the dough—founded in 2016 after years of perfecting a single recipe, the shop was inspired by a mysterious 1898 cookbook. That old-world, storybook vibe is baked into every corner of the shop (and every bite of their cookies).

These aren’t your average treats:
• The Scale: Each one is nearly half a pound! ⚖️
• The Craft: It takes over 24 hours to prepare a single batch.
• The Loot: I snagged the Original Chocolate Chip, the decadent Triple Chocolate, and the salty-sweet Pistachio Toffee.

My verdict? These cookies are absolutely huge and incredibly rich. I love them! If you are ever at Disney Springs, I highly recommend that you brave the line. It’s a must-do!

The Baseline
The Baseline: For a desert shop the flavor of offerings must out-weigh the taste of pure sugar, there must be unique/rare offerings that drive me to go there, and the value of the desert must be balanced with the fact I probably just finished a meal.

Food: Ginormous cookies full of all the things that you want and need (as long as you define need as sugar, butter, flour, etc.). The cookies are an experience that you should try if you get to visit Disney Springs (though you will have less of a wait if you visit the shop in Orlando). The price of the cookies are substantial but you are getting a true treat when you order. We got a mix of regulars Original chocolate chip, Peanut Butter Crunch, Banana Bread Chocolate chip and Triple Chocolate. We also ordered two seasonal Dark Coffee Cake and Banana Box Pie. I am only through the coffee cake and a little of the chocolate chip and they taste amazing and the cookie is a mound of deliciousness.

Service: This is a wait in the line then order service with displays and fun looking decor in the queue as you go through. The staff are polite, helpful and patient. Great service.

Ambiance: This is Wednesday meets Harry Potter meets Chibi art meets cookies and cake. It is a fun bake shop with a line to get in. We waited 15 minutes in line to get to order and it was fine because Disney Springs is a fun place to hang out. The decor is fun and there is a lot of photo ops in line while you wait.

Great experience and the staff was so friendly. We waited about 30 minutes which was tolerable but anything longer and we’d reconsider and maybe come back later.

Every cookie we got was perfectly balanced and not overly sweet. It’s definitely worth trying out. We’ll definitely be back and will try additional options.

Lastly, the banana nitro cold brew was phenomenal. Definitely get this!

This bakery is so adorable! I have been wanting to come here for years now and I’m so happy I finally was able to! I love the theming and the paintings all over are so cute. I really wish the location was bigger and you could eat in there but still really cute! We ended up getting the original chocolate chip and the pistachio and they were so good! These cookies remind me of the New York cookies and I love how big they are.

This is perhaps the coolest bakery I’ve ever been to. The gothic aesthetic is unique and the decor matches the promise. There are lots of fun quotes and images on the wall, and everything from the boxes to the wrappings match the vibe. And the cookies are all great. Lots of toppings and everything is most and delicious. I’m a sucker for a chocolate chip cookie, and while it was a little heave on the chips, it was very flavorful. We got several different kinds and the original chocolate chip was our favorite. Lots of people were also raving about their cold brew, but we aren’t coffee folks. But almost everyone in front of us ordered one. And the staff are all friendly and chatty. It makes the experience that much better. You’ll wait in a stupid long line, but it’s well worth it.

We’ve tried to visit Gideon’s on 2 other trips but were there late in the evening when the wait was longer than our patience. Getting there early paid off this time. It was worth the wait, the atmosphere inside is incredible, the young lady at the cash register was super friendly, and the cake and cookies were as delicious as we expected. It is a bit overwhelming as the line moves pretty quick and you may feel pressure to not hold up the line, or maybe it’s just my anxiety. Either way, if you can brave the wait, it’s a fun experience with tasty treats.

My go-to spot everytime I come to Disney!

The cookies at this place are what people line up for – and there is always a line outside. Came here 3x on my Disney trip and there was always a line. You get a menu card to look at to help you make your decision before you get inside where there is another smaller line formed.

The inside is somewhat of a witchy decor and feeling. Its all moody and Black with cool art on the wall and bookcases all throughout. I heard they used to have “smoke” at the cash registers that really set home the theme, but it seems that they do not do that anymore sadly.

Gideon’s is known for their cookies and I always get them when I come. They are truly massive and every flavour truly hits! My favourite way to eat them is from the freezer. The night before you take one out and put it in the fridge. By morning you have this deliciously dense and chewy cookie that is my perfect cookie texture!

I heard that the Peanut Butter Cold Brew was truly something to behold so I knew I had to get it for my coffee fix. Wow! Thats all I can say. It was by far the most delicious flavored coffee I had and would get it every single day if it weren’t for the line lol. I did try the Cookie Butter Cold Brew as well – it was ok, but not as good as the Peanut Butter. If you can’t decide, trust me that the Peanut Butter is the one!

I also saw that sometimes they will have “Bites”. It is basically day olds that they have chopped up and dipped in chocolate. They dont have them everyday but when they do, I would advise that you grab a bag a try when you can. Each bag has 1 flavour in it although I do think a variety pack would be a really greatvidea. My bites were their Peanut Butter Crunch Cookie and it was really really good!

Finally, the cakes are what others seem to talk non stop about so I thought I would give them a try. On my trip I got 3 different slices and it pains me to say that they did not meet my expectations – the seasonsl Krampus, their seasonal Lemon Gingerbread, as well as their Carrot Cake. Every piece I had, I found the cake itself to be dry, even the carrot cake somehow. So dry that I could not even stick my fork in it to get a piece before it started crumbling. The icing is where they win brownie points for because it was always so delicious and dense – they often use a marshmallow based frosting so it’s not that buttercream most are familiar with.

I will most definitely come to Gideon’s every Disney trip no matter how many times I need to wait outside in a line. Cannot wait to come back – but it won’t be for the cakes.

We went here reading about the history Boone review we decided to go in. The line was about 30-40 min long. We got the peanut butter and chocolate chip pistachio Cooke and the cookies n cream cake and the traditional cold brew. It did not disappoint the cookies and cake were wonderful. Cookie shop giving Victorian Tim Burton vibes. These are all over TikTok and Instagram and the hype is real. Easily the best cookies we’ve ever had. Waited in line for an hour and we were still able to pick up the exclusive morning cookie. While we were in line multiple people asked as they walked by if the line was worth it. Let me tell you that yes they are absolutely worth waiting in line for an hour. The peanut butter cold brew? I would wait in line just for that alone. We lived in the Seattle area for 5 years surround by what we thought was the best coffee but this one broke me. Don’t sleep on the morning cookie it’s sooo good. Seems to have multiple layers to it and I cannot describe what these actually are in words. The cookies transcend any cookie, cake, granola bar you have ever had. Definitely not too sweet. Awesome is an understatement.
