What an amazing experience this evening. The ambiance and atmosphere of being in an old mill on the water was perfect for a dining experience. We were greeted woth friendliness and promptly sat near the entrance to the outdoor seating area.

Our server, Eric, was very attentive and great at providing recommendations. The forcaccia bread was amazing!! It literally melts in your mouth and is a perfect starter. Their Caesar salad was one of the best ive ever tasted and gave us a perfect start into our pasta dishes. I chose the Lucha Zozzonna which has to be the best pasta dish ive ever had in my life. The fact that they hand craft their pasta makes all the difference.

We finished with both the Gelato and the Amaretti cookies. It was so tasty and the perfect ending to the meal. Overall we were very pleased with our experience and I will be recommending it to my family and friends who still live in the area.

Dinner here was hands down the best meal we experienced during our week in VT. The ambience, both inside and out is stunning and very thoughtfully done. The meal was perfect. Honestly better than other restaurants with big reputations and price tags. The eggplant parm app paired beautifully with the focaccia. My husband and I shared the stuffed pappardelle and lumache alla zozzona. Make sure to book your reservation in advance!

Not only was the food delicious, but the way they handled my dietary restrictions was exceptional.
What truly made the night, though, was our waitress. She was incredibly kind, attentive, and made me feel completely at ease. It’s always a little stressful eating out with dietary needs, but she went out of her way to make sure I felt safe and cared for. She even made me a freshly squeezed lemonade (which wasn’t on the menu) since there weren’t any drink options I could have. That small gesture meant so much!
It’s rare to find a restaurant that delivers both amazing food and truly thoughtful service. Highly recommend!!!

We reached out to Gallus in Waterbury about two weeks before a very special family event to see if they might be able to host a family-style dinner for us; on fairly short notice. From the very beginning, they were incredibly accommodating and welcoming.

They put together a four-course, family-style meal for our group of ten that was honestly one of the best meals we’ve ever had. Every course was extraordinary — the food was outstanding, beautifully prepared, and incredibly generous in portion. No one left even remotely hungry.

Beyond the food, the warmth and kindness of the staff and the atmosphere they created made the entire evening feel truly special. They turned an important night for our family into something unforgettable. We are so grateful and can’t recommend Gallus highly enough.

The food was absolutely delicious and the restaurant was lovely. Having eaten at sister restaurants The Hen of the Woods and Prohibition Pig (note: we don’t live in Vermont), we thought we would try Gallus and we loved it.

I might have preferred a more varied dessert menu but the gnocco frito and the stuffed parpadelle were fantastic!

I’ve been visiting this area of Vermont for 7 years now and this was the best meal I’ve ever had here. This place was warm, inviting, and such a vibe. The view was great but definitely came second to the taste of the food! I highly suggest you try this place and sit outside for the “best seat in the house”. Also a big shoutout to our server Jessie! Thanks for your recommendations!

One of the best pastas of my life (saying it as someone who ate a lot in italy). Amazing food, great friendly service and very nice atmosphere. It’s a must try in Vermont. Don’t forget to make a reservation in advance.

Not only is the food here phenomenal but hospitality oozes out of everyone’s pores. Every single person in that building shows exemplary kindness and truly welcomes you. I went by myself, and I went with a group of friends and both times I felt the exact same – wonderful. Kate specifically is phenomenal and extremely personable. Chef Greg was wonderful and kind as well, personally delivering dishes to guests. The entire staff makes you feel as if your dining experience is the most important. I’ve never had a mediocre meal here- or truthfully, something I didn’t obsess about. The skirt stake is to die for, the beats are wonderfully balanced, the cello flight dreamy, and the wine list absolutely impeccable. Truly breathtaking all around. ❤️❤️❤️❤️❤️

Very nice place! MAKE RESERVATIONS! walk in excepted but limited space. Service was excellent. Fast and knowledgeable. So the vibe is interesting. Cuban music with a latin name but serves modern italian? Anyway the food was excellent. The twist on the Caesar salad was cool very fresh. The calamari was excellent and tasty. The pasta dishes were all very different and large. I would recommend sharing with each other family style in the future. So many different flavors from the different dishes. I really enjoyed the open kitchen and those guys and girls were cranking! Soooo my only suggestion would be Bread! The sauces were so good that if only there was fresh bread to clean the plates…… i would also find a great pastry chef and work desserts better. Overall A

Ate the most delicious early Mother’s Day dinner here tonight. We were awe of our delicious pasta — y’all, the gluten free pasta was in my top 3 ever (!).

My husband loved his stuffed pappardelle and my mother in law loved her clam pasta. I got the daily special on gluten free and it was crazy good — pasta texture held up well and the sauce was delicious.

Great ambience inside and drank some delicious wine. Highly recommend.
