We had a wonderful dinner at Gaia yesterday with my family. The service was truly astonishing—Cesar and Bruno went above and beyond to make the experience personal and memorable. The raw bar tour, along with their detailed explanations, gave us a new appreciation for sustainable fishing practices.
The food was exceptional. The bacalao was hands down the most delicious fish I’ve ever had, and I highly recommend the Ensenada Cebiche—fresh, vibrant, and full of flavor. A fantastic dining experience all around!

My family had a dinner at Gaia, Mayakoba. The greeting was fantastic. The atmosphere is beautiful. We ordered oysters, tuna tartar, octopus as appetizers. All of them were fresh and melt in the mouth. As main courses we had white fish, clam pasta, salmon, and seafood soup. White fish with white sauce was so good. Highly recommend. Everyone was happy for their main courses. Only thing I want to mention is that bokchoy(Chinese green) in the salmon did not present well.
The waiter was excellent. If you are in Fairmont Mayakoba you should try this restaurant.

Ambrosia made the first night of our honeymoon incredibly special. Prepared a special dessert for us, offered my husband tastings of 3 different wines to ensure we enjoyed it most with our dishes, provided perfect dish recommendations and was incredibly attentive and kind throughout the whole meal. We loved the food, the tour of fish options at the start of the meal. It was no surprise but our meal was incredible on all accounts.

I recently dined at Gaia and had an exceptional experience. The food was absolutely delicious, with a wide array of local fish that were both fresh and expertly prepared. The service was outstanding, making the evening even more enjoyable. They successfully removed the cilantro from all the food I had, which is something that not all places can accomplish. A special shout-out to Chef Jabi, who did an amazing job presenting and explaining all the different local fishes. His insights and recommendations opened up a whole new world of flavors that I wouldn’t have tried otherwise. Highly recommend!
Yes, it’s a bit pricey, but that’s expected for a restaurant by the beach at a 5-star hotel!

Gaia is hands down the best restaurant at Fairmont! The Seafood Tower was super fresh and delicious, the Totoaba was perfection, and the Chocolate Textures is a must.
