One of the most memorable culinary experiences my husband and I have had in Breckenridge. The evening felt both elegant and playful, with each course bringing a new surprise. We were lucky enough to attend a pre-opening dinner at Forage, and I am still thinking about it.
It is an intimate shared table experience that feels intentional from the moment you walk in. Small group. Thoughtful pacing. You are not just sitting down for dinner, you are stepping into something that has clearly been carefully created.
This is not a traditional tasting menu. It is a 12-course experience rooted in Colorado, with subtle nods to local history and mining.
The food was incredibly beautiful but also genuinely satisfying. Every course felt purposeful. The wine pairings were phenomenal and clearly chosen with care. Each one elevated the dish in a noticeable way.
The space is beautiful and every detail feels considered. The chef and team have built something that feels authentic and very Colorado.
We left feeling grateful we were able to experience it. Breckenridge is lucky to have this.
