The Flaming Pig has the best brisket in town, IMO, and offers a better selection of sides than most barbecue spots in town (though you may disagree if you’re not a dill fan). They also offer a selection of sauces, including a tasty Carolina Gold and a spicy BBQ sauce that is actually spicy. They are committed to spicy – true Chili Heads may add more, but most of us spice fans will be content.

So good I put my real name (rhuel). I drive the western 11 states for work. Without a doubt this place is easily in the the top 10 places for bbq within the western 11 if not the whole country. The service and interactions with the people that work there, in my opinion, are what made the entire experience; Super friendly, accommodating, and jovial – We had lost track of time and accidentally stayed close to their closing time, but they didn’t say a word. The restaurant and the bathrooms were clean. The food was ok, somewhat small cuts/portions for the price. Being from the south, BBQ is kind of a hard kick to satisfy if I’m not back home.

We were really looking forward to a great BBQ dinner based on the reviews. I am not sure if we were here on an “off” night (10/30/2025) or what, but there wasn’t one item that we ordered that was edible. The brisket and ribs were so overcooked that they needed to be drowned in sauce just to choke them down. The sides of beans and Mac & Cheese both tasted like they had been sitting all day. The service was spot on – the gentleman behind the counter (loved his custume) was so friendly and welcoming. Again, based on the reviews, maybe they was a bad night. But our party of 5 will not be back.

Had to try it based on reviews. Won’t be going back. I dislike leaving bad reviews. They say they have the closest thing to “Texas bbq” that you will find. I’ve been to Texas, I’ve ate at lots of Texas bbq joints. Drove to the middle of nowhere to get some brisket out of an old Airstream. Ate brisket in damn near every state. It was served chopped. Not sure if I got the last they had or what. In Texas, it is served sliced or they say “chopped brisket” on the menu. No flavor, definitely the worst brisket I’ve ever had.
The pulled pork was good. The Mac n cheese, not so much. I’ll be going to the other place in town from now on. Cause it’s amazing!

Flaming Pig BBQ is hands down our family’s favorite bbq spot! This is a gem and their food is amazing. If you want great service and authentic bbq, this is where you want to go! I also love how family friendly they are. Owners care very much about the community and are amazing people. Highly, highly recommend!!

Fantastic BBQ! This place is a true hidden GEM!! I’ve been there 5 times in the last 3 weeks no joke. I haven’t tried anything I didn’t like, and I am looking forward to trying everything they offer. They are my favorite BBQ in Thurston county without a doubt. My go to sandwich has pulled pork, Mac and cheese, and amazing kielbasa all piled on a hoagie roll. They have 4 different homemade BBQ sauces to choose from that are all delicious. I could keep going, but I think I’ve made my point. Now get yourself down, and give them a try. They are open Tuesday thru Saturday 11am to 6pm.

Great barbecue! The Lemon Dill Coleslaw was deliciously cool and refreshing, a great counter to the spicy bbq sauce. The two meat platter was a large amount of food, and I’d recommend both the sausage and pulled pork.
One tip, get a water jug and some cup.
