Ellas Events recently stopped by The ART Hotel Denver after a meeting with Temple Denver to discuss our club takeover for the Compass All Star Party. Since our VIP guests will be looking for a great dinner spot before the party, I wanted to check out the rooftop at FIRE Restaurant—and it did not disappoint.
The views are dramatic, the space feels elevated yet approachable, and the menu is just as impressive. The fall salad with pomegranate, Dino kale, butternut squash, pepitas, cornbread croutons, and shrimp was packed with flavor and perfectly seasonal. During Denver Restaurant Week, the gazpacho trio made it an easy “yes” for a night out and gave me a chance to try something new.
I was also excited to explore the Bear Den—such a great option for a more intimate gathering or pre-event cocktail. FIRE delivers that ideal combination of atmosphere and quality: a place where you can enjoy great food, stunning views, and conversations that matter.
Ron was absolutely wonderful cause he noticed we had a little boy and kindly brought crayons, helped our kids with his favorite fries & fresh juice, and made sure everything was perfect. He patiently explained the menu and made us feel very comfortable even though we’re not native English speakers.
We ordered the Short Rib Quesadilla, Wagyu Brisket Burger & Fries, and Mussels. Their fries were so good that we even ordered another round through room service after dinner. The quesadilla was also amazing — crispy on the outside, cheesy and flavorful inside.

Went for restaurant week, and it was a nice menu, but I’m not sure I would come back. Cheese plate was yummy, and the popcorn dessert was interesting. Good portion sizes. But it all didn’t really wow me.
We had dinner with a reduced (but nonetheless great) menu, that felt like a great balance of flavors and nutrition. We started with the Southwestern kale salad (kale, pickled red onion, fire roasted corn, cotija, green chile caesar, cilantro) which was very tasty and filling. Then, we followed it with the 45 day dry aged ribeye (with wild mushrooms, spring peas, leeks, risotto, wild ramp béchamel). The cooking point was exactly as I ordered and all together tasted great.
Dessert was s’mores, brownies and cookies.
The staff was absolutely fabulous, especially Faviola, who was attentive throughout the evening.
A few hours later I had a Caesar salad with shrimp, and Norwegian or Swedish salmon (can’t remember exact origin). I was skeptical ordering seafood in the mountains, but both shrimp and salmon were cooked just right, to a perfect temperature, not raw, yet very tender and flavorful.
I ordered their alcoholic drinks in the past, and the cocktails are never overly sweet, well balanced and have a great presentation.
