I wanted to like it… I really did. Family of 4 went there 5:30 on a weeknight. No wait to be seated. That was the best part.
Food was meh. Under seasoned and unremarkable. Margaritas were expensive and forgettable. Service was kind but also slow. Food came very quickly. Chips and salsa complimentary, but chips were hard. Salsa was good.
Lots of options on the menu.
Still 3 stars because mediocre Mexican is still pretty ok.

What can I say about this restaurant other than… Eh.
Came in on Wednesday night after an epic powder day on the mountain with a party of 4. We were able to grab the last table available at around 5:30.
Took a while for the server to come and take our order. We ordered our food at the same time since we had plenty of time.
We all got various items from the combo menu. Everything was underwhelming. Loaded with shredded lettuce, light on flavor. Everything could use more flavor / seasoning.
This was an entirely Americanized version and might cater well to the tourists.

service sucks! just came from there. me and my boyfriend went there. the server guy did not even acknowledge me or look me in the eye to say hi or get my order. Im brown by the way and my bf is white so he only said “hello sir how are you” and i thought thats not a big deal its okay. he was not nice as well and he was like shouting to our face its not even that loud in the restaurant . then we ordered the appetizer, it came then my bfs order came. i waited for like 15 mins to see if my orders gonna come and told my bf he can start eating cause we aRe both hungry. he finished his food and my order never came. i asked for the check and my order was not there too. but i know i ordered it even my bf said he heard me said it clearly and the server wrote it down.
also they overcharged us with our orders. charged us with a bigger pina colada but all we saw was one price one size in the menu so that was the one we thought we are ordering. but they said it was small and we got bigger. i did not know there were sizes.
i also asked for cheese dip with guacamole but put it on the side and told him the 2$ one. but i guess he gave me a small guacamole thats worth 6.50$ but i do not know that there was a small guac because it was not on the appetizer list as well. only the guacamole to add on a cheese dip.
they are trying to charge you more on your orders. not asking what size and in the menu those sizes and prices werent even stated.
not gonna go back. rude servers, menu book is not accurate. just go somewhere else

Even better experience after my husband left his wallet behind with plenty of cash and it was returned to us intact by our awesome waiter.

I was disappointed the tortillas were store bought and the premium margaritas were made with sweet and sour. Despite that, the drinks were strong and decent the food was decent. I may have high standards for Mexican food so my review should be taken with a grain of salt.

I ate here two nights in a row. The food is super tasty – especially the rice and beans – and the prices are reasonable. I’m from LA and frankly don’t understand the haters here – I think the quality of Mexican food here is much better than other establishments in Colorado. Also the service is excellent. Next time I’m steamboat I’ll for sure be back.

We have been dining here and enjoying good Mexican food and drinks at Fiesta Jalisco for the past 20+ years!! It is a staple in Steamboat Springs and a locals favorite!
There’s nothing like a good tequila bar! Queen margaritas are delicious and refreshing! I always order the shrimp wrapped in bacon, Torcino!

We were excited to try this place, but that quickly faded when we hit a wall of contempt the moment we walked into the restaurant. The disdain projected by the service staff was almost palpable. Most of the time they would look right at us as we waved to them and then just looked away and ignored us completely. When they finally acknowledged us, one person literally threw a plastic bottle of salsa on the table while they were already turning away without saying a word. The entire lunch was a stunning display of apathy or likely something worse. The food itself was bland and ordinary at best. The fish tacos were entirely tasteless and we had to ask for limes just to give them any flavor at all. As you might expect, getting two slices of lime was quite an ordeal. The shredded beef burrito left the entire plate swimming in a pool of water. We decided not to order any drinks and just quickly ate and left. It was a remarkably disappointing experience.

I am sure (hope) given previous reviews this place is better than my experience but my experience was not good at all, service was extremely slow and often needed to look for staff, food took way to long to be served when it arrived the chicken was burnt and dry as cardboard and we didnt receive our full order so i was not pleased as i was starving, first meal after spending 2 weeks off grid in the mountains. On top of poor food and service, the glasses were dirty with lip marks so I asked for a staw but never received it…..
