Really a cool place. Not sure if it’s an elegant take on comfort food or a comfortable take on fine dining. Either way, I had a great dinner. They promote their selection of whiskeys and tequilas for sipping. I had a friendly conversation with Brian the manager about events they have coming up. Ambience is quiet and classy. Dinner entrees are pricy but cocktails I found to be less expensive than what you would find in a similar establishment.

Let me tell you…
My husband and I are victims of having a baby during covid and working our buns off. We haven’t been on a date seriously since she was a baby…now 5 . We chose Evolution cause we have never been and my sister recommended it. Since the second we got inside…we felt like we were cared about. The manager came over to Congratulate us xoxo.
The NY Eve menu was on point .
Mussels, caesr said, lobster chowder, filet, Bass and then a trio dessert.
We will be regulars here for sure!
Thank u host, Lexi our waitress, the bar tender helping deliver our drinks and the manager !!!! 5 stars for sure

Absolutely Beautiful restaurant!

Owners clearly put a lot of thought into the space. The lighting is perfectly placed. No lights in your face. Chandeliers are gorgeous.

Love the wallpaper and tables are spaced nicely.
Their large bar is nice.

It is a bit loud due to the high ceilings.

Food:

Hubby got the petit filets with mashed potatoes and broccolini. It was perfectly cooked and served hot. He scraped his plate.

I had their house salad with grilled chicken. Salad was a great size and dressed perfectly. Their vinaigrette is delicious. Grilled chicken was incredibly moist and seasoned so nicely. I would guess it is brined. I am most definitely getting their chicken again.

Drinks were spot-on.

Dessert was a Lemon Cake. Yum!!!

Our server was fantastic. Very attentive and friendly.

It was a memorable birthday dinner and we enjoyed it very much.

My partner and I accompanied friends to a soft opening. Dinner was a preset menu with a protein or vegetarian option. My partner and I picked both options to share. Here’s my take on the experience.
The staff was extremely attentive, welcoming and professional from the coat check/hostess to the server, bartenders and the owners. Our waters where barely empty before refilled, our silverware was replaced instantly, as was the wine bottle- I haven’t had service this wonderful in years.

The back room has a whiskey bar that my friends husband was blown way with. The bar was stunning, the wall colors rich, the music wasn’t too loud. And the temperature was perfectly moderate ( I run cold, my partner runs hot so this was a nice touch) lighting was just right, seating was comfortable and tables where beautifully set.

Now on for the food. Everything, and I mean EVERYTHING was amazing. Fish was fresh, seasoning was spot on, filet was perfectly cooked, melt in your mouth. Many of the dishes were not ones I would have chosen, but I’m so so thankful I tried them. I would happily convert to a vegetarian diet if this chef was cooking for me. The beet salad was by far my favorite dish, followed by the cabbage. The flavors were exciting, unexpected and melded beautifully together. The squash purée was so savory and sweet and buttery I would happily sit down with a bowl of that on its own.
This was by far the best meal I have had in NH, even better then Otis in Exeter- I’m really excited to try more of the full menu and to see what the chef will create next.
Side note, the drinks were delicious as well, and some very fresh takes on some tried and true cocktails. And the staff gave great recommendations and even mixed personalized drinks based on preferences. Again the whole experience was above and beyond what I would have ever expected in Manchester NH. This is the new gem downtown for sure.

This was our first time. We started the night at the bar. My husband was impressed with the bourbons he tried. I told the bartender the type of mixed drink that I like, and he whipped me up something; it’s called “something good” on the menu, and it was! ☺️
Another couple joined us for dinner, and overall, we were happy with our meals. We started with oysters and cocktail shrimp, which were delicious. We also got truffle fries for the table. Really, that was the only underwhelming dish of the night. The fries were nothing special, and seemed like fries you’d buy from the frozen section of the grocery store.
We all loved our entrees. I got the lobster cavatelli which was awesome. Lots of lobster came with the pasta, which was cooked perfectly Al dente. My husband got the beef ribs. I had a bite, and it was So. Good. Tender meat, perfectly seasoned with a deep, slightly smoky flavor.
For dessert, I got the passion fruit crème brûlée. It was fruity and sweet. Interesting flavor.
The service was great. The bartenders were cool, and our waitress at our table was friendly and perfectly attentive.
We’ll definitely be back!

We’ve been to Evolution Bistro & Bar twice now, and honestly, it’s amazing. This place deserves 5 stars, no question. The service, the atmosphere, the food, the drinks—everything was spot-on.

The first time we went, it was just the two of us, and we couldn’t stop talking about how good it was. The second time, we brought our friends, and even they were blown away. They kept thanking us for introducing them to such a great spot! The staff are so warm and welcoming, and you can tell the managers genuinely care about everyone who walks in.

This is hands-down one of the best dining experiences we’ve had in Manchester. We can’t wait to come back again!

First time here. I did not like BluAcqua so I was hoping this place would be better and it definitely was. 4 of us went on a Saturday evening on a reservation. We got right in. I started with a Golden hour cocktail which was probably $15 and almost completely ice. I know it’s a restaurant but give me a break. The next drink, a Spice Garden was a little better, but still, mostly ice. I finally switched to dirty martinis.

We ordered a bunch of things for the table including a charcuterie board, Brussels sprouts, and their 8 hour mashed potatoes. I enjoyed the sprouts, not sure why it’s a big deal that they’re 8 hour mashed potatoes though, they tasted like normal potatoes to me. My main was the octopus, and the salmón crudo, both of which I enjoyed. Other entrees at the table were the osso busco, the schnitzel and the salmon. My friend who had the salmon said she was sick all night, so there’s that.

I had one bite of the chocolate cake, it tasted chalky to me.

I thought the service was great and the restaurant is beautiful. I’m not sure if the drinks and food were worth the price. I would return for a special occasion and try it again.

I was fortunate after be there for their soft opening. The renovation of the places well thought looked great. My cinnamon white Russian drink set the tone for the rest of the night. Every meal was amazing. I loved the steak. It was savory and like butter to cut.
The cauliflower was very unique and delicious. Who knew that cauliflower could taste like that
