Ephemera’s tasting menu invites guests to embark on an epicurean journey through a multi course format. The menu evolves continuously, offering return guests a new experience at each visit, living up to the ephemeral nature of the original pop up dinners. The chef duo, Ian Dedrickson and Nora Dillon, encourage conversation, indulgence and experimentation throughout the meal. Reservations are recommended for the tasting menu & are offered from 4pm – 10pm. For years now, I have been on a quest to find Colorado Sorings’ best eats. I have posted many in-depth reviews here, most positive, some negative, but always honest. Of all the delicious dining establishments I’ve had the privilege of trying, I believe the title of “Best” resides firmly with Ephemera. Tucked inconspicuously away above the bustling COATI collective is a veritable hole-in-the-wall of culinary genius. Behind the heavy glass doors lies a sanctuary of food, art and art as food. The intimate, windowless space is adorned with a rotating collection of local artists’ works, which often serve as inspiration for the dishes and drinks. And what dishes and drinks they are! The cocktails are highly unique and incorporate both traditional and downright bizarre ingredients to produce surprising flavors. The real star of the show however, is the food. If you want the full experience, go with the seven course tasting menu. It is a crazily creative collection of culinary creations carefully curated by Chef Ian Dedrickson and Adam Ridens. Each dish is masterfully prepared and beautifully plated. They are a true work of art for the eyes and tongue alike. Their cooking style is elegant and refined, but incorporates a certain playfulness in the utilization of unexpected ingredients. I highly recommend going for the full Monty and ordering the wine pairings. Not only will you get a chance to try something extraordinarily unique, it will be expertly matched to each course. We were thoroughly impressed with the staff’s in-depth knowledge of each bottle we tried. In fact, the service all around was top notch — textbook fine dining without all of the snootery (that’s a word now). Ephemera is a hidden haven for those that find joy and art in food and wine. We will be back as often as our wallets will allow.

Ephemera was the perfect spot for our Anniversary night. It was an amazing experience for us to share. From start to finish we had a great time and every bit was delicious. We did the 7 course meal with wine tasting. Each dish was beautiful and it was quite filling. The art and lighting was lovely and romantic. I suggest sitting at the bar for the whole experience. The whole team was welcoming and knowledgeable. They took the time to teach us what we were eating and drinking. We also really liked how relaxed the vibe was. The restaurant is inside COATI so when we left dinner, we tried some drinks, walked around and enjoyed the fire pits. Overall great night!!

Ephemera is ALWAYS a 5 star experience. We’ve attended a couple of the special holiday events (Halloween and NYE) and they are an incredible experience. The normal 7 course tasting menu (pics attached) is always a winner. Special shout outs to Robin and Tracy for being consistently amazing!
