So disappointed !! Started out good and ended very disappointing. We had a large party. ( they seemed to have plenty of staff to handle our party, or so we thought ). After we got seated the waitress seemed attentive, she took our drink order, but never asked about appetizers.( I did ask for an appetizer but our waitress never asked the rest of the group if they wanted any ) Got our drinks and then we put in our food orders. After we got our food our waitress said she would be back for refills. ( That’s where things went down hill). Some of our party needed condiments , never got them or had to ask another waitress to help. Our drink refill order , never came, even though another waitress kept saying, oh your waitress is working on it. We had to ask a different waitress if she would please get us some refills because we were so desperate for drinks at that point. Keep in mind we understand that big parties means you need to show some grace toward staff to accommodate large parties, we get that. But come on there has to be a point where only getting your initial drink order and having to wait that long for a refill is getting ridiculous. So the other waitress was so kind enough to come and help us . After we ate, we sat around waiting for the waitress to come back and offer desserts, nope nothing. When she finally did come back to our table she gave us our checks. For the record I never heard anyone at our table being rude or disrespectful. We were just a group of family and friends who wanted to come together and have a meal together and enjoy each other’s company after celebrating our 5 year old ‘s birthday at a children’s event. Several were looking forward to the peach cobbler and trying some of the other desserts only to leave disappointed and with no dessert. We didn’t bother to ask because of two reasons our waitress didn’t seem to care that our party was so neglected by her and two by the time we got to the dessert stage we were about done dealing with trying to get the basic needs for our table. To the waitress that helped with us getting refills, thank you for stepping up when others didn’t. ( btw we did give her a cash tip for her service ) to our waitress just a simple apology or showing you actually cared would of given you a generous tip from our group. Instead I think you earned the smallest tip our group has ever gave to a staff member. Our group usually never tips below 20%. But because of our overall experience I think the max tip she got was 15%. Per ticket. We had 4 different tickets total in our group. Hope the next experience is a better one. ( we always believe in giving establishments a second chance because you never know they could of been struggling with being short staffed, terrible management, bad day etc… ) we shall see

I had high hopes, but was let down as soon as I opened the to-go plate. You could tell by looking at the brisket that it was going to be dry. The BBQ sauce that was gelling already didn’t even help chock it down it was so dry. The ribs were no better. Mac and cheese was the same you get at any other place. The fried okra was at least decent. I would only recommend if you want to build jaw muscles and risk choking trying to get this down.

Our server, Taylor, was a delight. Polite, professional, helpful, and very attentive with a strong work ethic… maybe there’s hope for Gen Z after all. . Her parents can be proud.
As for food quality, I base my reviews of Texas BBQ restaurants primarily on the brisket (as God intended). The sliced brisket was tender enough, good flavor, although just a little dry… but I think I know why. There was no attached, rendered down fat cap. If this restaurant is smoking briskets without a fat side up fat cap layer, they should ask forgiveness from the gods of Texas BBQ. Otherwise, delicious sides, big portions, good experience.

I visited right at opening, hoping for the freshest and best food. What I recieved wasn’t that. The young lady at the front was super sweet and spoke highly of the food. I ordered the ribs, brisket, sausage, macaroni & cheese and potato salad. To say I was disappointed would be an understatement. The meat all read dry and lacked seasoning. The macaroni was over done and dry as well. I spent $30 on my meal and hoped for much more.

Stopped here on the way back to Waxahachie and found a good meal. Unlike Rudy’s, for example, where you get sliced brisket moist with lots of fat or not moist being very dry, the Ellis County BBQ sliced brisket was just right in my opinion. The sliced sausage and sliced brisket in the two meat plate seemed more than what you’d get at Dickies BBQ. The cole slaw was good, even though the mayonnaise base was runny. The potato salad was good but needed more potato, in my opinion. Service was very good, considering I was dining alone and all the tables around were full. Noise is not too loud, and that’s a plus for me. Too bad there isn’t an Ellis County BBQ in the county seat of Ellis County.

My wife and I went to lunch here for the first time recently. We were sat down pretty quickly and asked what we wanted to drink and if we were ready to order. We gave the waitress our drink requests and told her we were not ready. It took about 15 minutes for her to get back to us, as several customers left at the same time. I ordered the ribs, brisket, mac n cheese and tater tots. The meats were dry without the delicious BBQ sauce and the sides were really good. My wife had the chicken and loaded mashed potatoes, which she said were good. The staff was very nice and friendly but they appeared to be understaffed and overwhelmed.
I really appreciated seeing all of the hometown signage, especially the Chris Kyle support. We will return here to try some different dishes.

Very good barbecue Our waitress was very attentive we didn’t have to ask for anything she took really good care of us its nice and clean , friendly staff. The owner Was friendly as well she came over and talked to us for a few minutes

The food here is always great, but the service today was exceptional! But today, on Christmas Eve, they went above and beyond. We realized last minute that we didn’t have enough meat for our family gathering. Even though they were closed and working a catering event, they answered the phone and absolutely saved the day. That kind of service is rare. Thank you, Ellis County BBQ!
