It’s okay, it used to be better. My pizza was under baked, but it’s only because they are trying to cook it on a pizza tray. Why would a pizza shop not cook directly on the stone or if they didn’t want to use a screen, but a solid pan creates an undercooked crust when the top is finished??? Maybe they are just trying to keep the oven clean to make the end of the day easier, but it’s at the expense of the quality of the pizza.

Sounds like you need to train your employees on your process, because they definitely were not using screens and cooking and reheating slices on serving trays. Maybe instead of blowing me off as wrong, I would check your processes are being followed so your product matches your standards, because that pizza wasn’t right…
