I finally tried the quesabirrias at El Tequilero and WOW — absolutely worth it.
The tortillas were perfectly crispy on the outside with that golden, slightly charred cheese crust, and the inside was packed with tender, flavorful birria. Every bite had that rich, slow-cooked taste that pairs perfectly with the consommé on the side. Dipping the tacos into that savory broth with a squeeze of fresh lime just takes it to another level.
They serve it with chopped onions, cilantro, and plenty of lime, so you can customize each bite exactly how you like it. Everything tasted fresh and well-balanced.
I also grabbed a drink to go with it (highly recommend pairing it with something cold), and it made for the perfect meal.
