I try different items on the menu. Some I’ve loved, some I’ve liked okay, and some I wouldn’t order again. Staff is friendly. Can be a little noisy depending on where you are seated. Prices are relatively average. Drinks I’ve tried have been good-excellent. Usually very tidy. For a close place to have a nice Mexican food meal I would recommend.

We went in on a Saturday to have a lunch. We shared one burrito and our waitress ignored us.the whole time.When she brought us our food. The plate was super hot, and she didn’t even worn us and the food was just warm. Now I’m not one to right reviews, but when your attitude is how you make money, I suggest you be nice. Normally, the service and the food is great not this time.

Came here for lunch and was not disappointed. I would recommend coming here as the quality of food was good and the portion size is good too. Th service was average but very friendly and helpful. I ordered a few different items to see how everything was and i was very pleased. Let me tell you when you order a cup size of green chili its actually the size of a bowl. The bowl size is actually a very large bowl. I got the menudo, green chili, cheese enchiladas, and did fundido as an appetizer. The wife has the pozole and the meat was very tender. I also heard they have great breakfast but did not try it. I will for sure come back with the family again another time. I really want to try more of their items. I did only give four star for the atmosphere because the inside is outdated.

1st time there, stopped by on a whim coming home from a 11 hour drive and the wife found this little gem on Google. Very welcoming staff, nice cozy ambience and the food tasted great! Everything we ordered was flavorful and delicious including the marks! They did not have home made tortillas, but said it was due to the current staff shortage.

This a fantastic restaurant. They have a huge selection, and an awesome lunch menu whis is very reasonably priced. The food was fantastic and the service, just as good. We’ll be back for sure.

Absolutely enormous portions of tasty food. We ordered a side of guacamole and Mexican pizza with chorizo for the table and I tried the enchiladas sunrise (with two fried eggs). Not used to having enchiladas with green chili as opposed to red chili but it was very yummy! A little more expensive than your usual place but considering the quantity, worth the cost! Definitely had to take half of it home but leftovers are a good thing, especially when it’s so tasty.

This place is consistently delicious every time we’ve come here! The enchiladas deluxe are very filling and tasty. The sopapillas and fried ice cream is great too! Plus the staff is wonderful and always very FAST. Jovani is our favorite waiter!

It was a dark and stormy night … oh wait, no it wasn’t. In fact, the weather was quite mild, if a bit chilly. Regardless, I was hungry and nothing but a burrito was going to satisfy my hunger. Trust me when I say that I choked down half a dozen Snickers in my attempt to assuage my appetite, but no, my hunger remained. In actuality, I wanted Chipotle or Qdoba, but nothing like that exists in Elizabeth. Sadly for the rest of us, but good for the owners of Guadalajara’s, there Elizabeth has only the one Mexican dining experience.

FWIW, I’m told there are two other restaurants in this chain but I’ve never had a meal at either and so can’t compare this store to it’s sisters.

I walked in not expecting much. Sure, the locals all told me the place was fantastic, but as previously mentioned, there aren’t a lot of Mexican restaurants around to compare it to. In fact, one either needs to head into Franktown, Parker or Castle Rock to find one.

With trepidation I stepped through the front door and …

…ordered. But first, I had to find out what was worth ordering. Normally, I’ll ask the server for their recommendation but since I didn’t have a server (I was ordering carry-out) the matire’D was going to have to suffice. First he tried to tell me everything on the menu was excellent, but if you’ve ever eaten at a place more than once, you know “everything” isn’t always “excellent.” Restaurants and, more importantly, chefs, tend to specialize in one area or another only adding more menu varieties to attract a larger crowd. So, after turning down the “everything” comment he finally told me when he eats there he orders the #23. So, I ordered the #23 – and fajitas.

What wowed me? The quantity. As a to-go customer I fully expected the portions to be smaller, but they were not. In fact, I ended up eating so much my stomach hurt from being too full. Woe was me. /sarcasm

The refried beans were obviously can-fresh and the rice wasn’t that great either. The chips probably came from a restaurant supplier – they were just a little too uniform in size to take seriously as made in-house.

The rest of the meal was fairly decent if not great. Nothing really stuck out and nothing was so incredible I”ll sit up at night dreaming about my next venture to Guadalajara’s. I’ve definitely had better – more authentic – Mexican food in both Denver and Aurora (as well as when I lived in Texas, Arizona or my many trips to Mexico), but it was good food for Elizabeth and while I can’t say that I’ll run back, I will probably return sooner or later.

As for the facility itself, the decor was Mexican restaurant-gaudy-chic but brought a sense of fun nonetheless. I particularly enjoyed the reprints of early 20th century photos from Mexico’s revolucion.

Not authentic at all. Mexican food is not about heat. But about the spice. This place is has heat not much spice. The town of Elizabeth needs restaurants that truly have great tasting food. This is not it.

We’d never been but had passed by often so decided to give it a try. While the food was great, the service sucked. Our waiter never made eye contact, mumbled the entire time and was inattentive. It’s on the pricey side, which we wouldn’t have minded if the service had been better.
