Upon entering I was struck by the hand painted mural that told the story of El Pilar’s journey from food truck to it’s current location off of South Riverside drive. Having talk with Sonya who had said with pride that El Pilar Restaurant had been at this location for over four years. She suggested that the next time I should try the gordita, I figured I would order a Indian (Navajo) Taco and also order a gordita to take home for dinner.
The Red Chile (Chile Rojo) sauce on the Indian Taco immediately signaled its freshness upon arrival. The first mouthful was a delightful combination of crisp lettuce, onion, and tomato, complemented by the excellent chile sauce, perfectly cooked Navajo flatbread and beef. The meal was superb. Similarly, the Gordita was excellent, especially with the unique El Pilar Sauce. Both dishes confirmed that this establishment is another shining example of exceptional New Mexican cuisine in Española.
At the end of my meal, I had the pleasure of speaking with Sonya when I went to pay. I complimented her on the exceptional food, and she responded with a smile of simple pride, saying she just loves to cook. This simple statement speaks volumes: El Pilar is authentic New Mexico, a place destined to be a long-term fixture in the Espanola dining scene. As I was leaving, Sonya invited me to the restaurant’s celebration this summer for its 5th anniversary. This gesture shows that the owner of El Pilar not only cares deeply about her restaurant but, like all great local New Mexico establishments, truly values the community that has supported it over the years.
