So with that said, I would make sure to arrive around 11 am or later. Because while they do “open” at 10:30, they are not ready to take orders – they are still setting up. So the weather being nice was much appreciated!
Pollo taco: 7/10 but with that green sauce 8/10 – the chicken was a bit tough and didn’t have very much flavor on its own
Carnitas taco: 8/10 I didn’t taste the raspberry chipotle sauce and that was sad so I ended up adding the other sauces
Green sauce: 10/10
Red sauce: 9/10 – this one has a kick to it so if you don’t like spice, leave this one closed
Elote: 6/10 I was so bummed because I love elotes but the tajin was very overwhelming and I just couldn’t enjoy it all
The service was average. They weren’t unkind but they weren’t friendly either. Catching them right as they were starting their day was probably annoying so I get it but it made this a tough experience.
If this was my only experience I would have rated them a 2, but years ago I went to their food truck when they were in a very different location and I’ve raved about them having the best tacos ever. Sooo I don’t want to kill that image for myself nor downplay my first experience, so I will give a 3.
And this location is at a corn maze so there’s no parking lot, but you can pull into the gravel and park there!
I happened to be in town for the night for a work trip, and I decided to try this place out last night because I was craving some quick yummy food. After moving to CO from CA three years ago, I’ve only found myself being disappointed by Mexican food in CO. It always feels like Mexican food in CO is either tex-mex or Mexican food for people who’ve never had the real thing before. I was a little reluctant to try this spot because there seemed to be no one else there and because it was rainy and dark out.
I ended up ordering the Elote, one carnitas taco, one carne asada taco, one quesibirria taco, and an horchata. The meat was seasoned and cooked to perfection, the quesibirria was making my mouth water it was so good, and the Elote was a taste of my Los Angeles roots. I am going back today before leaving town because I don’t know when I’ll get to eat tacos this good again. Thank you so much!
