I was so glad you were open on a Saturday evening when I needed a hot drink and a bite to eat after freezing my fingers filming at Lakefront and Sand Point Beach Parks on the first cold night of the season. It was cozy and welcoming inside — I loved playing Yahtzee with real dice and even setting up solitaire with real cards. I didn’t think I’d remember how to deal after 30 years, but muscle memory took over. The nuts, chai, and bruschetta made for a perfect meal. I especially loved getting to choose four bruschetta toppings — such a fun and thoughtful touch!

We stopped by Edelweiss Bakery in Prior Lake this weekend and loved it! The cakes and pastries are baked fresh right there, and they taste amazing. The atmosphere is cozy and welcoming, and you can tell everything is made with care. Definitely a place I’d come back to again!

I love this place a lot!

The food is fantastic.

I love their scone and sandwich with four cheese bread. I was amazed from the first bite of the sandwich and loved it so much.

The scone is perfect. I always have one for dine-in and one for takeout.

You can find a spot and dine in. From my experience, weekends can be very busy, but weekdays are usually not that crowded.

The staff are friendly too.

Overall, I truly love this spot from my heart.

Edelweiss is a great bakery and cafe.

They have tons of rotating pastries and other baked goods and while we only tried a few items, they all looked very good. They also have a good sized coffee menu as well with various styles of drinks.

Their cinnamon roll was very good. The exterior got almost a crème brûlée exterior so it crackled when you bit into it. It was a nice size for the price and wasn’t overly sweet as some can be.

The inside has seating that wraps around the cafe but it fills up quick and there’s usually a line out the door so work that into your visit.

Definitely would recommend stopping into Edelweiss Bakery if your in town.

Love this local coffee shop! Their coffee is amazing. I love their lavender lattes. I usually get the breakfast sandwich on a croissant but this time they asked what kind of bread I wanted and I wasn’t thinking straight and said sourdough. It wasn’t toasted or even warm and the cheese hadn’t even melted. I think this was a one off because normally it’s really good.

I love coming into this local coffee shop/bakery/bistro. The pastries are delicious, the salads and sandwiches are amazing, and the coffee is tasty. My only complaint would be space- when it gets busy, it REALLY gets busy. But it’s well deserved! Highly recommend.

I rarely write reviews, but this experience was SO odd. I usually enjoy Edelweiss, which is why this was especially disappointing.
I ordered a banana caramel latte and received what tasted like watered-down banana milk with almost no flavor.

Assuming the caramel had been forgotten, I politely asked for it to be added. Instead, an excessive amount was poured in, turning the drink into pure sugar milk — still undrinkable.
Because these drinks are expensive, I waited in line again to ask for a remake. At that point, the woman working (possibly the manager) raised her voice at me in front of a full line of customers, saying, “Our banana syrup already has caramel in it,” as if I was supposed to know their internal recipes.

The interaction was hostile, embarrassing, and completely unprofessional. If a drink is made poorly, it should be remade — period — without shaming the customer. No one enjoys asking for a remake, and being publicly scolded over it is absurd. The employee was clearly in a terrible mood and took it out on a paying customer.

I won’t be returning. There are plenty of better coffee shops nearby with far better service — Brim, Cedar Press, Tapestry, and others.

We always enjoy our desserts here. Yesterday they even had a gluten free opera cake that hit the spot for my partner. I had the salted caramel chocolate mousse and it was supreme. Thanks for being an important part of the community!

This bakery is so cute, I wish I could have tried everything! My son and I both ordered a seasonal cold brew (cinnamon roll) and shared a croissant egg sandwich. Both items were incredibly delicious!
