We drove over an hour to try this place. It was amazing! The blood sausage was so delicious. Haven’t had anything like that. Also had fish with shrimp and lobster sauce over it with rice and gandules. It was the best thing I’ve eaten in a long time. The chuleta with Mofongo was also amazing. We had the passion fruit juice And the Malta along with the coconut flan and guava flan. Words can’t describe the taste! It was really a wonderful experience and can’t wait to go back.

I don’t know why I’ve never left a review because I’ve been coming here for years, all the way from Boulder. I’m Boricua, and this is the closest you’ll get to the island out here. The food is absolutely delicious, I can never get enough. The coquito limber, flan de guava y queso, and Nutella tres leches are all to die for.

This time I ordered churrasco cooked medium with arroz con gandules, and everything came out perfect. The steak was cooked exactly right and the rice was amazing. The portions are also very hefty you definitely get your moneys worth I always have leftovers and I’m not a skinny person.

Just a heads up, this place is very loved and always busy. It’s a small restaurant with about 10 tables, so you might have to wait, we waited about 15 minutes. Also, they sometimes run out of popular items near closing, especially things like alcapurrias that require prep ahead of time, so come early or order ahead if there’s something specific you want.

The atmosphere is upbeat and lively, and the restaurant is always clean and welcoming. Definitely worth the drive every single time.

I’ve known the staff and the owner for years, and they honestly feel like family. They always make you feel welcome, and you can tell how much love and pride they put into their food and service. That’s a big part of why we keep coming back.

I have been here twice, and both times have been 10/10 for me. The fried pork was crisp and savory, the rice was on point, and the plantains were perfectly sweet. The staff is amazing as well. Definitely recommending to friends and family.

Wasn’t sure what to expect at a Puerto Rican restaurant, but man oh man were we stoked about what we found! Everything was super fresh and the portions were huge! The flavors were spot on.
My personal highlight was the passionfruit hot sauce they had. I could put that on everything. If I could, I would take a bottle of it home!
This will definitely be a must go every time we’re in the area.

This place is special, left here with a big smile on my face 🙂 It’s hard to find delicious, authentic food here in the Spring’s and this was it! Plus the people that work here are kind, helpful, full of joy for what they do & it shows. We had 2 specials, roasted pork w/ plantains and rice & shrimp with lobster sauce, mofongo, salad. My favorite was the shrimp dish w/ that yummy sauce, but that roasted pork was a hit too. I left w/ some beef empanada’s and tres leches + guava flan, and they were as divine as both meals. Best believe we will be back to try all new items next time!!

Just moved to Colorado Springs from Austin and back in Austin we had some Puerto Rican food but it was just ok. I was seriously missing Puerto Rican for a while and was thinking moving to Colorado might make it difficult to find good boricua food. Then found Don Guillo and wow was not ready! was expecting it to be decent at best, but the moment stepped in, felt like I was back on the island.

The vibes, the smell, the music it felt like was chinchorreando again ordered the carne frita with arroz mamposteao and some queso frito on the side, and everything was so good. Perfectly seasoned, crispy, flavorful- just like home. The staff was super friendly too, and found out they have daily specials, so you already know be coming back for more.

This place İs a gem. If you’re Boricua and homesick or just want to try real Puerto Rican food, this is the spot.
