I absolutely love the tonkotsu ramen at DOMO Ramen, especially the one called tonkotsu black.
I’ve lived in Canada for many years and now in the US, and over the years I’ve tried a lot of ramen places in both countries. Back when I was in Toronto, where the food scene is very strong, I did get to try some fairly authentic Japanese tonkotsu ramen. But after moving to other provinces in Canada, and later to the US, I honestly hadn’t found a ramen shop that truly hit the mark for years.
DOMO Ramen was the first place in a long time that reminded me of what real Japanese ramen should taste like.
What really sets them apart is the noodles. Many other ramen places here serve very soft, overcooked noodles, sometimes soft to the point where it completely ruins the texture. DOMO’s noodles, on the other hand, are firm, springy, and have a great bite. They feel much closer to authentic Japanese ramen noodles.
The broth is another big highlight. It’s rich, fragrant, and clearly slow-cooked, with none of that instant seasoning or powdered soup-base taste that you often get at other ramen shops. A lot of places have broths that honestly remind me of instant noodles, but DOMO’s tonkotsu broth tastes clean, deep, and genuinely homemade.
The pork chashu is also excellent, tender and flavorful, like it’s been simmered properly for a long time, very much in the Japanese style.
The portion size may not be huge, but for me, authenticity matters far more than quantity. If you’re looking for real flavor rather than just a big bowl, this is absolutely the place to go.
Highly recommended for anyone who truly cares about authentic Japanese tonkotsu ramen.

Some of the best ramen I have tried. Been to many places, but this one tops them. The broth in the Tonkotsu ramen was phenomenal! Great flavor. Will definitely make a trip to come back.

My first time trying ramen and I LOVED it. I had the Black Tonkotsu Ramen and it was unbelievably delicious. The only worker was very kind, very pretty bowl design, and just overall very peaceful vibes. I highly recommend this shop and I am confident enough to say that this is the best ramen shop in all of Texas. And to the guy who gave me the ramen that day I just wanna say thank you ❤️ ❤️ ❤️

Located at the corner next to Zuke’s and Whizzbang’s, Domin Ramen is an quiet spot with one man working and the occasional ramen ready for pickup on the bar top. I was craving something savory and domo ramen popped up on my radar. I got the black tonkotsu ramen and the flavor was rich & savory. And it has a more genuine feel for a ramen place in Waco. I’d definitely recommend this place if you’re craving something rich and savory at Union Hall. The service was great and the food was ready swiftly.

Very good ramen spot that came to waco, suprised to find an actual good one in union hall. Broth was on point, I definitely pick this over king noodle, hokkaido, and the other local ramen spots. You can add extras into your ramen but i think it comes with a good amount of everything. I got and highly recommend the tonkotsu black

Food was so fire! If you are in Union Hall you have GOT TO try them. Best ramen I have ever had. The cashier was also kind and patient with multiple recommendations.
