I ordered the sampler and a hot link. The hot link was fresh, great bite and spice but not too overpowering. Then I opened the box for the sampler…
First impression was that it didn’t look appealing, then I realized the pulled pork was dry, the brisket had dry roast beef consistency and the ribs seemed undercooked.
The spicy barbecue sauce was good, but the sweet sauce was as close to cough syrup as it was to barbecue sauce.
With no smoke ring on anything and just the faintest hint of smoke in the air, I am not sure why it’s called a smokehouse.
It seems like the food was reheated and not cooked for today, but rather leftovers from a day gone by.
Hopefully this was just an off-day and their food is more like the hot link than the pulled pork, smoked sausage and brisket.

Doc Watsons has been open about two months. This was my first time trying their “central Texas BBQ”. I had the ribs and brisket combo with monster beans. Let’s start with the highlights. The beans were quite tasty with pieces of brisket and pulled pork. Unfortunately the ribs came charred and we’re a bit dry. Their BBQ method avoids using sauce during the process, but not sure this is typical of so called Texas BBQ which I am a big fan of. The ribs had a nice flavor but we’re a bit chewy. Not fall-off-the bone tender by any means. The brisket was on the dry side and lacked flavor. However the sweet bbq sauce did help.
I am hoping I got them on a bad Thursday evening in mid July. However, judging by the plenty of empty tables, perhaps not. I’ll try something else on their extensive menu next time in the hopes of finding superb bbq before writing them off for good.
Kudos to the wait staff which was was super friendly and helpful.

Our first time visiting Doc Watson’s Smokehouse and we were very impressed! The wife and I both had the sampler platter which came with a generous portion of ribs, sausage,pulled pork and brisket ( more than I could eat ). Everything is smoked to perfection. For sides we had the mac and chesse (best ever) and green beans which were awesome as well.
I highly recommend you come and check this place. You wont be dissapointed

Stopped by for an afternoon bite and got a sample of variety.
Sided:
Coleslaw – probably the best version compared to any other bbq in the area. Nothing funny in it. Crunchy and creamy
Green beans – surprisingly not salty cooked with onions and bacon. Little sweet from bacon rub.
Cornbread – moist, sweet. Excellent.
Baked beans – good, though a bit of heat.
Meats:
Brusket. – nice texture, not dry, not salty.
Smoked turkey – flavorful, moist, nice seasoning.
Pulled pork – can’t go wrong here.
Burnt ends – really good, carmeluzed and saucy.
Looking to try more.

Everything is separate unlike the picture of menu that shows combos. Portions are small & way over priced! 1/4 portion can clearly feed 1 person. Only have corn bread muffin.. 1.25 ..and small. Its not bad but geez $46 bucks total

Went for lunch after church. Wasn’t very busy but restaurant was clean and staff was friendly. We ordered a meat platter to share and 3 sides to go with it. Brisket was very tender and had some good flavors. We did not detect any smoke flavor in any of the meats though. Pulled pork was not very seasoned and was dry. The ribs were well seasoned but again no smoke. A regular knife would have been nice to have with this as it’s hard to cut ribs with a plastic utensil. Sausage was good with a good spice.
The sides were a surprise as most places don’t do well with them. I didn’t care for the potato salad as the shredded potatoes didn’t seem to be cooked enough and it was mostly Mayo with not enough seasonings. The beans were very good with a little kick. I like the brisket they put in there. I really liked the Texas green beans. Lots of garlic, bacon with a little sweetness. Overall we liked it and will be back.

We are totally into our food for flavor, texture, temperature, balance and price. The pros: hot take-out, tons of meat on the big sampler platter, excellent rib rub with a nice char and smoke ring. Happy balance between fall-off-bone but with a slight tug so you know it’s still meat. The baked beans, mac n cheese and coleslaw are off the hook! Best I’ve ever had. Peach cobbler, if you have room to eat it, is a must. Very traditional and delicious. The corn bread muffins and Mexican street corn were also very tasty. All foods have texture like you expect and wonderful flavor profiles. Great sauces and they are just a bonus because the meat tastes great “naked”
Cons: it is slightly more expensive than some but well worth it for flavor and freshness! The portions for the sides for the largest platter are not enough for 6-8 people so you should either double up(you get 4) and just get two of two sides or simply buy 1 or two extra above the 4 it comes with. The bacon that they serve with the platter is way way too sweet and flabby. BUT I have to say if you break it up with the sausage it is very balanced against the saltiness.
All in all, we will definitely be back. Even if just for the smoked Turkey! Yummy.

We ordered a sampler dinner and a pulled pork sandwich. Tender brisket, flavorful and smokey. The monster beans were delicious and the coleslaw was perfect. BBQ sauce was a little too sweet but that’s just my personal taste. Everything was great…….and don’t forget the cornbread! Delicious!

I was running some errands in the area mid-day when I came upon Doc Watson’s BBQ. I was starving so I stopped in, not knowing it even existed. I sampled a number of items, brisket, pastrami, ribs, burnt ends, pig candy, mac ‘n cheese and monster beans. The beans are very unique because it includes brisket, pulled pork and pig candy. So yummy. Because good and authentic BBQ is scarce in these parts, I was pleasantly surprised to say the least. My favorite was the brisket but all items were delicious. I’ve had BBQ all over the country including Texas, KC, Memphis, and elsewhere that boast great BBQ and Doc’s is right up there. The staff was very friendly and helpful. The seating area is warm and welcoming. I met the owner Chris and his passion for his product and service was obvious. He invited me to see the back of the kitchen where the smoking happens and the refrigerated area with the meats, some being marinated and some being brined. High quality stuff for sure. I smoke meats myself so we had a fun conversation about the process and what makes great BBQ. I’ll certainly be back and I gotta try the smoked prime rib served only on Saturdays. I love prime rib but never had it smoked. Well done Chris. Six stars.
