Diamondback’s has become that place for us—hands down our son’s favorite restaurant in town and the perfect break from dorm food. We try to make it down every three months or so, and it never disappoints.
What sets this place apart is the owner, Meghan. She personally oversees every aspect of the operation, from the kitchen to reservation scheduling, and it shows. We had an issue once in getting our table at the exact time we requested with the hostess. Meghan immediately contacted us and apologized and assured us that she would that would be rectified. She certainly kept her promise and each time since, she personally reaches out to us to confirm table reservations. That level of hands-on care from the owner is rare and really makes you feel valued.
The food is everything you’d expect (and hope for) from a top-tier Texas steakhouse. The filet mignon is phenomenal—perfectly cooked medium-rare every time, melt-in-your-mouth tender, and when you add the sautéed mushrooms and that luxurious truffle sauce… it’s next-level delicious.
The sauce brings this beautiful earthy depth that complements the beef without overwhelming it. You absolutely have to try the lobster tail too—just tell your server to prepare it the way the Baylor Basketball team likes it. It’s a fun little insider request and the result is outstanding!
The wine list is impressive and thoughtfully curated, the sides are excellent, and the whole experience feels polished yet warm and approachable.
We usually dine a little later in the evening, and on our last four visits we’ve been lucky enough to have Ky as our server. He is genuinely one of the best waiters we’ve ever had anywhere—super professional, incredibly attentive (drinks never run low, he times his table visits perfectly, reads the table like a pro), and never pushy with upsells, but always happy to share great recommendations. After a few visits he started remembering our names and greeting us like old friends. It’s that kind of personal service that keeps us coming back.
Everything about Diamondback’s—food, service, atmosphere, and ownership—delivers a consistently amazing fine-dining experience. If you’re looking for a special night out in Waco (date night, family celebration, or just treating yourself), this local gem is the one. We highly recommend it and can’t wait for our next visit!

We were there for about two hours and barely had service for most of that time. We also noticed other tables being shown boards with the different steak cuts and having them explained by their servers, which never happened for us.
The steak itself was bland and lacked flavor, and the sides were subpar. We were told a birthday dessert would be brought out, but it never came, which was especially disappointing since this was meant to be a special celebration.
Honestly, the only standout part of the meal was the bread and butter, which were phenomenal. Unfortunately, everything else fell far below my expectations for an establishment like this, and I left feeling really sad that my birthday dinner was not the experience I had hoped for.
DiamondBack’s was an awesome experience from start to finish. The staff was super friendly and made us feel right at home. The atmosphere is warm, elegant, and perfect for a special night out.
But the real star? The Fried Lobster! It’s not on the menu, but if you ask for it—you’re in for a treat. Crispy, flavorful, and absolutely delicious. Highly recommend giving it a try if you’re in Waco!
