We were suspicious of the low rating / food truck pho, and the result was completely a decent surprise. We ordered pho – if you have an Asian stomach and are looking for some soupy noodles, this place got you fixed. The sauce they paired with pho was a great mix of sriracha and hoisin and maybe something else too? We loved it

Great pho and spring rolls. This was tastier than some of the restaurants I went to. The packing (soup & noods separately) is great for taking it out of the park. The lady was also very kind to take my order and warned about time it might take (I arrived before the opening without realizing it)

Ignore other ratings that dislike the pho. The pho is top notch if you know good quality pho. Also their Hoisin/chili oil sauce is amazing .Thank you!!

GROSS SITUATION: I’ll explain ahead – I’ve been in Maui 3 nights now, visiting from Phoenix AZ and we ate dinner here on night 1. I had the vermicelli with chicken and egg roll, my husband had a tofu with mushroom teriyaki. My food tasted fine but my husband did NOT enjoy his. Texture was slimy/gooey and gross, there were no mushroom despite the description and it was flavorless.
Flash forward to today, I’ve had medium level gastric upset starting about 24 hours later (from both ends). I can not definitively say it was from eating here, HOWEVER – I did witness the gentleman making the phos and preparing most of the food was wearing gloves, proceeded to leave the truck and go beyond the vehicle in the dark and proceeded to touch who knows what, return to the truck and open the door to the truck with said gloves still on and proceed to finish preparing my food.
I would have normally rejected the food and requested a refund and explained why BUT I was here with my best friend for her wedding and her fiance was excited to try the place (said he’d eaten there before)
Aside from this meal, we have eaten at Duke’s as well as humuhumunukunukuapua’a’ so I am sure it is possible but not likely that my gastric situation was from this meal as I do not think what I witnessed bodes well for the state of sanitation/hygiene and food handling practices of this place.

Unseasoned and bready banh mi. I could’ve made better food with a microwave. If you want to get a mouthful of raw carrots eat here. It also costed 18 bucks!!!!

After a long 10 hour day driving the road to Hana & back, stopped by the food truck park in Kā’anapali before going to the resort and saw a food truck serving pho… I’ve had lots of pho before! Probably my most expensive pho to date, which is not surprising considering we’re in Maui but well worth it! The best noodles I’ve ever had hands down, and a huge portion of them at that with a good amount of meat! The broth was really good, although I will say I have had a better broth elsewhere back home. Overall, even for a food truck… I will say this place ranks in my top 5 best pho’s I’ve ever had!
