An absolute gem. The chips seem to be made fresh by the minute, and the salsa! There is no other like it.
Chicken enchiladas were my wife’s, but I tried them and they’re excellent, chicken was seasoned extremely well, and they’re huge! $13 & highly recommended.
The Beans & Rice are a staple of the any good Mexican restaurant. This place has a them both down to a science (I put the enchilada cheese blend on my beans, they gave it in a little cup). I could eat it the rice everyday, it reminds me of the rice from “Chevy’s Mexican Restaurant” in California (an extremely good Mexican food chain).
10/10 on both.
I had the steak fajitas with two sides of enchilada cheese, it comes with guacamole & sour cream, but I got it without. Maybe ask for 5 or 6 tortillas, because they give you an enormous amount of food. Once again the meat was seasoned perfectly. Plate was still sizzling until we left. $16 worth every penny.
This place is a MUST if your in the Springhill Brooksville area. It’s an easy 10/10.

The staff was incredible, even staff in passing would make sure we were taken care of. Food came out in 5 minutes and was delicious. Everything was fresh and authentic, will definitely come back here!

We love this place, everything we ordered was great, hot and seemed authentic. Salsa was good and the even have a hot version. Seafood was fresh and well cooked, not over cooked or rubbery. We’ve been back about 6 times now. I’m so happy their about a mile from my house.

Service is great. Food was delicious. I had chicken fajitas. The meal came with all the goodies. Chips and salsa was good. I ask for a hotter, spicy salsa. The server brought a green salsa. It was awesome. I enjoyed the food. Atmosphere is pleasant. The booths appear hand painted and are gorgeous.

Absolutely love Coyote Rojo! I previously visited the location in Dade City and it closed. So now I visit the location in Spring Hill and I drive about 40 minutes from Land O Lakes FL to enjoy their food! Love the salsa verde, red salsa, the rice! Love the chicken fajitas – full of flavor! I will always visit this location – it is my fave Mexican restaurant in the Tampa area!!!!!

We had dinner at Coyote. It first started with warm fresh chips and homemade salsa. Having been to Mexico I was impressed with the salsa…it had onion and cilantro like in Mexico. My wife had burritos while I had the seafood burrito and a green sauce chicken enchilada. Both orders were great. One reason we live Coyote is they are one of the only restaurants that actually flavor their refried beans and rice…they care about their quality. Service was quick and yet they knew to leave us time to visit with the other couple we were with. The price was more than fair and we once again had a great time at Coyote Rojo.
Almost forgot, they make the best margaritas, great quality and more than fair price.

One of our favorite Mexican Restaurants! We rode by all the time and noticed they were always crowded. I found this place looking up reviews and they had the best. It’s only 4 miles from our house. We have dined here several times and each time it has been great. Fast, friendly service, great food, decent prices, always have a special, big portions and Tres Leche to live for!!! Highly recommended!!!
