Standout meal at Pawling’s star restaurant. Staff was as friendly and attentive as staff can be. Stellar service on a busy night. Cocktails were well crafted and generously poured. Starter bread & butter was a cut above. The famous Black Dirt Onion Rings lived up to the hype with a super unique airy breading. Burrata was high quality with sumptuous pesto with a charred element that tied with the grilled toast sublimely. Filet mignon had a perfect cook and delicate texture, great sides. Margherita pizza had a nice tangy sauce and great char on the crust and undercarriage. Like a gourmet bar pie, super crispy. Very tasty tiramisu. Atmosphere was classy with an upbeat, post-industrial rustic vibe. Feels like the place to be.

We (six of us) had the opportunity to visit this new restaurant for dinner on December 27, 2025. It was “unofficially open” that night, with limited reservations and a limited menu, prior to the full opening on January 1. For a place just getting their feet under them they did an excellent job.
It was clear that the head chef/kitchen staff were well-versed in creating a top-of-the line experience with excellent choices. Small touches like the olives on the table and garnishes on the plates made that evident (and of course the great flavors of the dishes). I had the prime rib, which came with outstanding, local, onion rings which frankly couldn’t have been better. A few other highlights were the rice balls and creamed spinach. The fact that many of the items are locally sourced was great as well. For me, this assures freshness as well as support for the local community.
The ambiance was outstanding….from the entryway to the dining area. The fireplace was just so cozy. I particularly liked the fact that they had hightop tables near the bar if you wanted to just stop in for drinks and appetizers.
The staff went out of their way to make sure we were happy with the food and service.
If I had to say something negative – it would be that the bar wasn’t fully stocked yet, but the alternatives we chose were great. This wasn’t enough of an issue to bump down the rating!

This restaurant is a hidden gem. The food was exceptional. All the ingredients are local and/or from local markets. Every little detail made it a perfect meal. We will be going back— we have wanted a high end restaurant in our area like this for years! 🙂

Excellent dinner with a buddy of mine. Several stand out dishes. Smoked trout dip was fantastic, even the crackers it came with, and the onion rings, as simple as it sounds, were a perfect texture. We were really impressed with the pizza, “the local”, even the look of the pizza was clever. I will definitely be returning. Comfortable place to spend an evening, with excellent food; not always an easy a thing to find.

What a lovely new establishment. It was too crowded when we tried to walk in. But we came back later for a drink at the bar. Lovely atmosphere, bar tender was very friendly. We shared a desert that was divine. Looking forward to returning.

The service, drinks, food, portions, and atmosphere were all wonderful. And to top it all off, white table cloths -a lost touch. They’re kid friendly as well if that’s needed. If I had to hold them accountable in any area, it would be desserts. If savory is your thing, then disregard, but they didn’t have the traditional sweetness we are used too. Overall a 4.5

Great addition to the Pawling community. We’ve been here twice for dinner and once for brunch since they opened and have not been disappointed. Cant go wrong with the pizzas, and the filet I had was perfectly rare (how I order/like it).

Excellent restaurant. I was told that everything is fresh from local farms, and I could tell by the taste. I totally recommend this place. The service is amazing and it’s clear that every detail has been carefully designed.
