If you’re on the hunt for incredible barbecue in Florida, Colt’s Pig Stand in New Smyrna Beach is an absolute must-visit. After trying a few barbecue joints across the Sunshine State, I can really say: SO FAR this is hands-down the best brisket I’ve had to date.
At Colt’s, you’re given the option of regular or marbled brisket, and both are fantastic depending on your preference. The marbled version, in particular, is rich and tender, yet never greasy. The brisket here is always savory, incredibly tender, and perfectly cooked—not overly smoked, not dry, just barbecue bliss. It’s a textbook example of how brisket should be done, and you can tell that this place takes serious pride in their smoking process. It reminds me of Texas brisket, and that’s a mouthful!
While the brisket is the star of the show, the smoked barbecue chicken is also excellent—juicy, flavorful, and nicely seasoned without being overdone. Their pulled pork, pulled chicken, and smoked sausage all hit the mark as well. Everything I’ve tried so far has been consistently good, and you really can’t go wrong with any protein on the menu.
Serving sizes are generous, ranging from $20 to $25 per plate, but here’s the kicker: each plate easily makes two, sometimes even three full meals. You’ll leave full and still have plenty to take home. Meals come with a couple of well-prepared sides (the mac and cheese is a personal favorite) and your choice of Texas toast or other equally delicious bread options.
The staff is always welcoming, friendly, and quick—from the moment you walk in, you’re greeted and seated efficiently, and service stays fast and attentive throughout your meal. The restaurant is also consistently clean and tidy, from the floors to the restrooms, and the atmosphere strikes a great balance between casual comfort and southern charm.
My only wish for Colt’s Pig Stand? Wi-Fi. It would make the perfect place for a casual lunch meeting or remote work session. But aside from that one tiny detail, I honestly can’t find anything else for a wish list.

Overall, a well decorated, clean restaurant with typical but nice ambiance. I had the three meat plate with the baby back ribs ($4 up charge), pulled pork, and marbled smoked brisket. The flavors of each meat were good, but the pork and beef were a bit on the dry side. Ribs were tender, although not completely “fall off the bone.” All meats were well smoked rather well and had good flavor. The BBQ sauces came in a few varieties and were all very good. The collard greens were surprisingly good and fell mostly inline with southern tradition. Mac and cheese was creamy and delicious. Corn pudding was amazing and not overly sweet. Portions were generous and the prices were reasonable. They have good lunch and dinner specials too. Add in a full bar and you have a solid bbq joint….solid, but not stellar. Definitely not a waste of $.
Our particular server was not the best, although adequate. She was a somewhat curt and off putting in her attitude. Other servers seemed very polite and attentive however.
Overall a solid although not stellar BBQ joint – I would definitely return and recommend to others.

This place was not worth driving to beachside from Edgewater. Rather eat Dustin’s and stay close cause juice wasn’t worth the squeeze.
The sides were upgraded to Onion Rings and Loaded Tots….the Tots definitely should have been warmer as the cheese wasn’t even melting, there was a good amount of bacon and sources though.
The Onion Rings were very intriguing, the batter reminded us of a chicken nugget type of coating. It wasn’t bad, but perhaps applied a bit too thick.
Service was outstanding as Nichole took great care of us!
The decor was fitting for a BBQ place..nice looking wood theme and a very well stocked bar area.
