Our experience at Cibola was absolutely wonderful! Every time we stayed at the resort, this place became one of our favorite spots. The food was consistently delicious, and the ceviche was truly top notch. The food was gresh, flavorful, and perfectly prepared. The drinks were just as impressive and beautifully crafted.
A special shoutout to our amazing and super attentive waiter, Joshua. He was like a breath of fresh air. He was friendly, funny, and genuinely welcoming. He recommended some fantastic drinks, including the “Naked and Famous,” which quickly became one of our favorites! Joshua really went above and beyond to take care of us, and our stay was even better because of him.
We can’t wait to come back! Highly recommend dining here if you’re staying at the resort.

The view is absolutely beautiful and easily the highlight of the experience. Service was adequate — nothing particularly warm or memorable, but fine overall. Unfortunately, we waited nearly 90 minutes for our food, which was frustrating. When it finally arrived, it was underwhelming and didn’t justify the wait. To add to the disappointment, we were charged $76 for two margaritas, which felt excessive given the overall experience. While the setting is stunning, the long wait times, mediocre food, and steep drink prices made it hard to feel the value was there. I’ve honestly had better bar food back in the States.

We tried all the all inclusive restaurants in Pueblo Bonito. I would say that for flavor wise the Cibola has the highest rank. Excellent food and great service. The mussels, oysters, beef tail soup, beef rib, and catch of the sea are highly recommended. Even the salad and the house bread are the best ones we had these days. Also we were able to get Scotch whiskey, which was mostly not available at other restaurants. We would miss this meal when the vacation is over.

Great shout out for the service today at Cibola…we request a fruit skewer with bananas, strawberries, nuts and honey that use to be on the menu. Our waiter spoke to the chef and they made a special plate for my wife! Great service and the fruit skewers were excellent!

Food was embarrassing.
I expected a lot more and got dry bread, potatoes from another day of that week, a cold beef and a warm plate- which might implies microwave working. The dessert was also not eatable.
For the service, took a lot of time to get those plates + basic mistakes in what we asked the waiter.

My family stayed at the Monte Cristo Villas for one week March 30-April 5th and ate here almost every day. The food was so delicious and we were mainly served by Marco, Jared, and Felix who were amazing and attentive. They especially went above and beyond and made every dining experience there memorable. Even when we were at the pool next to the restaurant Jared and Marco always made sure we had our mojitos and shrimp tacos.
They and the rest of the staff were so wonderful to my family. This was easily my favorite restaurant on the resort and I hope to get the opportunity to visit Cibola again. Thank you for the Amazing experience! (:
