We had the absolute pleasure of having Chef Big Wayne’s Jamaican Cuisine cater our large-scale event with over 200 students, and the experience was nothing short of phenomenal! From the very first bite, it was clear we were in for a flavorful journey. The spread was vibrant, generous, and packed with authentic Jamaican goodness.
The jerk chicken was hands down the star of the show—tender, smoky, perfectly seasoned with a sweet heat that hit every taste bud just right. It was bold without being overwhelming, and every bite had layers of flavor. The rasta pasta was creamy, rich, and had just the right kick, while the rice and peas tied everything together with that signature island comfort.
We were especially impressed by the golden and perfectly caramelized plantains and the flaky, savory, and absolutely addictive chicken patties! Even the vegetable options were so well-seasoned that they held their own alongside the main dishes.

My wife had Big Chef Wayne cater my birthday party on10/4/2025 at our home. The food, service, and professionalism was unremarkable! We didn’t know how much food we would need for 20-25 people, they advised us and gave us a price. They also added some extras in our package. The amount of food was right on the point, with some food left over. Everything was amazing! If you’re looking for a catered dinner or whatever, you must consider Big Chef Wayne’s restaurant. If you are looking for traditional Jamaican food, this is the place! We ordered 2 Jerk Chicken Combos and ended up sharing one and taking the other home! The jerk sauce is spicy and flavorful, the chicken falls off of the bone and the festivals are the best we’ve ever had! The service is beyond friendly…she even found me an extra serving of mac and cheese and brought it out at no charge! It might be missing the sunshine and sand, but the flavor and service with a smile makes up for it!

Jamaican food is one of those cuisines that is always a great idea. Understanding how to layer meat with flavor and balancing that out with spices and ensuring it’s brined all juicy is an art form! The staff at Chef Wayne’s spot are amazing, not only friendly but helpful and honestly reminding you what good service looks like! They were so kind and went above and beyond, which in the service industry can be very hit or miss. Now we arrived knowing we wanted all the beef patties lol, Jerk chicken (which comes with your choice of rice & peas or Mac n cheese with plantains and fried sweet bread) and Rasta Pasta which we added Curry Chicken which wouldn’t work flavor profile wise but wow, I was shook. The Jerk has such a level of depth of flavor and fell off the bone which just shows a skilled chef that executes every time. I even received a free Pattie which I’m so grateful for! Get behind small businesses WNY! These people are great at what they do and come with talent and all the flavors.

We had the Oxtail and the Curry Goat combos! Food is the best Jamaican I have eaten so far in Buffalo. Previously I had the beef patties too which were also good. Chef Wayne is super friendly and an expert in flavor. Highly recommend this place located inside of the West Side Bazaar!
