While staying at Allegretto, we enjoyed dinner at Cello Ristorante and it truly elevated our trip. From the moment we walked in, the reception and our server were warm, attentive, and welcoming. The patio overlooking the gardens and olive trees created such a beautiful and romantic atmosphere, perfect for a relaxing evening. Inside, the bar is also stunning — a stylish spot to start or end the night with a glass of wine or cocktail.

The food was every bit as memorable as the setting. We enjoyed a fresh salad that was crisp and refreshing, followed by appetizers that were flavorful and thoughtfully prepared — the mushroom pizza, artichokes, and charcuterie board were favorites and perfect to share. For our main course, we had the branzino, which was delicate, flaky, and perfectly cooked. Everything paired wonderfully with Allegretto’s own rosé wine, light and refreshing with just the right finish.
Overall:
Cello combines exceptional food, warm hospitality, and an atmosphere that feels like a little slice of Italy in Paso Robles. Whether for a romantic dinner or a casual evening with friends, it’s a place we’d happily return to again and again.

We ordered the Pea Risotto with beef and the Chicken Piccata. The risotto was basically an onion parade—so dominant it canceled out everything else. The chicken was okay but dry (classic breast meat struggle). Thankfully, the wine pairing did some damage control.
We also tried a few breakfast items during our stay at the hotel connected to the restaurant. Unfortunately, the same theme continued: most dishes were under-seasoned. Some tasted like the salt and spice budget ran out halfway through the recipe.
If you’re going for a drink and a good vibe, you’re in luck. Just don’t come expecting fireworks on the plate.
Lunch experience was amazing! Macie was incredibly sweet, attentive, and helpful. Food and drinks were delicious!

Wish our dinner experience was as stellar as lunch, but the service was much slower, inconsistent, and not as pleasant. Food was okay (would not order the same dishes next time):
-Focaccia Complimentary Bread (probably the best part of the meal!)
-Pesto linguine (didn’t love it)
-Vegetable Tempura (similar to deep fried fair food, very heavy)
-Side salad
Cocktails are on the pricier side, but the several we ordered were delicious!

-Mostly clean (some neglected cobwebs on various fixtures)
Overall, nice restaurant to have as a guest at the resort. Would recommend for a nicer, date night style experience.
I had a shrimp cocktail. Huge mistake, small frozen shrimps drowned in a ketchup like cocktail sauce. Pasta Carbonara, an Italian would have cried. Overall the food was so bad it was fun. Really great atmosphere is always nice. Drink a lot of wine and laugh
I expected a great dinner experience based on other reviews, but they still managed to exceed my expectations in every way!!
The bone-in ribeye was made in oak charcoals and was one of the best steaks I’ve had in years!! Definitely worth trying 🙂
The service was extremely friendly, attentive, and not over bearing.
Great atmosphere in the excellent Allegretto great hotel, with plenty of parking, and away from the rush of downtown.

STAFF REALLY NICE.
Food was TERRIBLE, Bread was stale, fish Smelt bad, filet mignon steak ordered was smelly, DRY AND I ASSUME COOKED FROM FROZEN as well . Desserts were very dry not good at all.
They ruined our night!
We traveled five hours for stay and dinner and very DISAPPOINTED.
