Castor was opened in August 2017 in the heart of downtown Corvallis, OR. Castor is focused heavily on local, organic, and sustainable harvested & foraged products as much as possible. We want to take the middle man out. Where we are located in the PNW gives us a bounty of ingredients and gives us the opportunity to work directly with our providers. Our wine program is passionately and thoughtfully designed around small, organic or natural wineries. We focus on wineries with unique stories. We want to showcase a wine you may have not had before. Monday 4pm – 10pm Tuesday – Saturday 11:30am – 10pm

Started our evening with a set of amazing and unique cocktails. Our server was very helpful in describing the details of the dishes to help us choose. The shrimp with grits was wonderful textures and spices – highly recommend it. The pork chops must’ve been great since my partner ate all of it before I could try it 🙂

Everything about this place was a 10/10: the service, atmosphere, food, and drinks! Everything was super fresh and absolutely delicious. The house made ketchup deserves a special shoutout, it’s incredible!

The bartender was fantastic! Not only did he make excellent drinks, but he was also super personable and friendly.

We’ll definitely be back next time we’re in town!

⭐️⭐️⭐️ (3/5) – Good, but not great.
The beef tartare was a knockout — I’d happily go back just for that. The gumbo and risotto under the scallops? Mushy, bland, and basically pablum that had lost its way. Cocktails were sugary enough to induce a toothache, and the bartender was a human megaphone, filling the room with nonstop chatter that made talking at our table impossible. Castor has potential, but it needs more texture on the plate — and less volume behind the bar.

In town for work and i came here tonight with two coworkers.
Very comfy place.
The food was excellent. Had the blackened cauliflower and the fillet minon and both were phenomenal. And not too expensive either.
Justine was our server and she was amazing. Super friendly and helpful with the menu. A+ for her service.

Came here to celebrate my sisters birthday, mom loved her salmon and I had the vegetable bowl. My potato’s could have been crispier but mom loved with rice that came with the salmon. They forgot the fresh strawberries on my dessert.

Wonderful restaurant with the best gumbo I have ever had. Everything was great, including the homemade cheese ball served with toasted bread, pork chop, steak, and desserts.

Great service too! We were in town for a function at Oregon State, and got finished 2 hours before our reservation. They accommodated us with no problems, and moved our reservation up by 2 hours. I really appreciated their flexibility, since we had a long drive ahead of us to return home.

Looking forward to returning soon!

Excellent food with enough variety for different food tastes. Brussel sprouts with plenty of pork belly pieces were nice and charred. Garlic burnt fries were tasty also. Had the filet mignon which was done perfectly with blue cheese (extra cost) on top. Pork chops and gumbo were good. For desert we had the the whiskey and cookie combo. Whiskey was ok but the cookies were sweet.

We visited on 31 May 2024. I had lived in the coastal south the previous eight years, and we had lived in Savannah for the year prior to moving to Oregon. When we saw that Castor does southern fare we were glad to give it a try. We got the gumbo and shrimp and grits. The gumbo was decent and I was a bit skeptical when looking at the shrimp and grits. However, I was pleasantly surprised at the flavor and the consistency was actually good. The cocktails were good as well. I would definitely go back.

If there’s ever an occasion in Corvallis to bust out the fancy hoodie, or Google, “how long after expiration can I still use mascara,” it’s for a meal at Castor. Trying to usurp Burgerville as the best date night spot in town is a tall order, but what Castor lacks in having kegs of ketchup at the ready, it makes up for in a host of other ways. Being one of the only ‘nice’ restaurants in town open on Mondays is a great start, as having to explain to my stomach that it can’t have a filet on certain days hasn’t gone over well in the past; it wants what it wants when it wants it.

Arriving on time for a 6:30 reservation, my date and I were given the unfortunate news that our table was not ready due to the earlier reservation’s guests not GTFOing in a timely manner. We were ushered to a bench on the other side of the restaurant and given water and a drink menu while we waited, which was fine, as it allowed for a thorough review of all the restaurant’s artwork and holiday decorations. Our 15-minutes of patience was rewarded with the best table in the joint, so that helped to right the ship after the initial delay.

My date started off with an Old Fashioned, and I with their NA Moscow Mule. When I asked if she liked it, I was told, “Yes I def did” (we’re still on speaking terms ), which is the sentiment I’d echo for my drink. It sure beat the water I usually have with dinner.

The Bread & Butter and Dinner Salad were solid and flavorful, but primarily used to prevent me from getting cranky while waiting for the main course, the Filet Mignon. French for “cute strip,” the filet was an easy choice for both of us because we only eat cute food. Placed on a bed of mashed potatoes, just like Jesus in his manger, the steak was very flavorful and cooked perfectly to my preference – medium (don’t @ me). My steak was very tender and not chewy in the slightest. The mashed potatoes were quite yummy in my tummy, too, and the carrots did a solid job at being a palette cleanser between bites of the good stuff.

Despite opting to end the meal after the filet and not getting a dessert, it was still a bit disheartening to hear that they didn’t have two of the dessert options listed on the menu. The Will in the parallel universe that was dying to get cookies must have been heartbroken to learn that, but I was ok with it.

Castor is probably a 4.5* establishment, but having to wait 15 minutes after our reservation time is causing me to round down for this visit. At least that’s the only thing that left a bad taste in my mouth. The staff was professional and did a good job; and the timing of the meal once seated flowed very well.

I enjoyed a friend’s lovely long birthday celebration meal at Castor last evening and the food, wine, cocktails, special dessert…everything was perfect. This team has a heart for hospitality and took great care of us. There is a lot to be said for management investing in staff with experience, and you can see, taste and feel that at Castor these days. Besides these special occasions meals, I’ll just pop in for a casual lunch, or a happy hour drink and snack at the bar and enjoy the same level of hospitality. It’s one of those “third spaces” we all need in our lives. Get out and spend time with your people and don’t worry about cleaning up your house. And oh my that cornbread tres leches cake was divine!
