Castor was opened in August 2017 in the heart of downtown Corvallis, OR. Castor is focused heavily on local, organic, and sustainable harvested & foraged products as much as possible. We want to take the middle man out. Where we are located in the PNW gives us a bounty of ingredients and gives us the opportunity to work directly with our providers. Our wine program is passionately and thoughtfully designed around small, organic or natural wineries. We focus on wineries with unique stories. We want to showcase a wine you may have not had before. Monday 4pm – 10pm Tuesday – Saturday 11:30am – 10pm

Delicious food!! My husband got the pork chops, and I got the risotto. Both were amazing! We also shared the dirty fries with pork belly as well as alcoholic drinks. This was the last meal of our honeymoon, and it was perfect. I am also gluten free, and they were very accommodating. I highly recommend Castor if you’re looking for a delicious, classy meal. We will certainly be coming back!

Best restaurant in town. Food was excellent, employees and customers were a delight. If aliens came to CorVegas, I’d tell them, “Eat at Castor’s, it’s the best around. Oh and order an old fashioned rum and airplane ;p.

What a delight to eat food from farms we are also shop with. The local fair was both familiar and delicious. It is a bit on the pricey side, and we did feel a smidge of a lack of attentiveness for the up scale feel they are going for. That said, the staff were very friendly and pleasant. We really like the atmosphere. And the location not directly on the busy main street was a real plus. The food is very delicious! The sous vide pork chop was tender and properly seared, but perhaps a little too big leaving a few bites a bit dry. The sauces are all to die for! Can’t say enough about the difference that makes! The stake was very good as was the scallop app with another amazing sauce. With a rotating menu based on local fair, this will become a regular routine for us for sure!

I am impressed by their dishes. It’s a beautiful place hiding in downtown. You need to wait a little bit longer than you expect the time when your dishes come up. So I recommend people who is not in a rush and have long conversations with friends or family when coming to this place. Nice atmosphere. The price is a little bit high but it’s worth it.

Walking in feels like a bustling yet intimate atmosphere. Tapestries hung throughout and there is a labryinth of small semi-private dining areas that are perfectly lit. Full bar with fresh made drinks. Appetizers and entrees that can meet any palette with local ingredients. Staff were awesome, inviting and knowledgeable with a pleasantly slow cadence that allowed for a great experience. The appetizer menu reached just a little and had fun flair unique to this establishment. Downtown parking. Prices were ok considering quality and portions.

We have been to Castor several times, and we have loved our experiences there. Yesterday, that wasn’t the case. My husband had a Friday off, so we found a sitter for our toddler and ventured off on a fun adventure. We stopped at Castor for lunch. When we walked in, the restaurant was virtually empty except for one other table of 2 that was finishing up, and one table outside. The host sat us at a table by the window. Hubby and I both enjoyed a glass of rosé, and placed an order for their shrimp and lobster po’boy. This is when our visit became disappointing. We waited almost an hour for a sandwich and fries. At that point, we were so hungry that we asked for some bread and butter. The server brought it out, and kept apologizing for the wait due to a large party in the back. When we received our bill, the charge was on it for the bread and butter. This was very frustrating for us since we wouldn’t have ordered the bread if it wouldn’t have taken so long for our sandwich. The ironic thing was that when the bread came out, our sandwich came out right after. It wasn’t about the $ for the bread, but rather the point of the whole situation. We wish that we would have picked a different restaurant for our lunch out.

Online Thoughts
This is unpretentious fine dining at its best. Walking in, there is a friendly staff to greet you and make you feel at home. Service is flawless and the food is delicious. There is nothing on the plate that shouldn’t be there. The recipes are the final version of a manuscript perfected, and the execution is spot on. Great attention has been paid not only to the balance of flavors, but also to texture and proportion. The scallops with cauliflower puree, braised kale, shallots, brown butter, & pine nut-raisin gremolata made me want to hug someone.
