Cask Republic, a beer lover’s haven with 2 locations in Connecticut, recently opened a 3rd in South Norwalk. Previously The Gingerman, the space has been revamped with a more open floor-plan and a mix of regular tables, communal tables, and a private wine vault in the back that accommodates 4 diners.

Cask Republic retains The Gingerman’s impressive selection of beers, and though they have reduced the number of taps from 42 to 37, it’s for an exciting reason: they now also offer 10 wines on tap, 4 cocktails, and nitro coffee. Personally, I think 37 taps of beer is more than sufficient!

Cask Republic is ready to expand its reputation from a great place for beer to a great place for food, too. After trying 9 of Culinary Director Carl Carrion’s dishes, it’s clear they’re on the right track.

First, spiced lamb empanadas, pork belly mac and cheese, harvest salad, shrimp and grits, braised short ribs, and bacon popcorn from their “Small Plates” menu. The two standouts were the shrimp and grits, which were topped with perfectly cooked shrimp (I’d happily eat a plate of them solo or add to a salad), and the braised short ribs. Topped with a soft cooked egg and accompanied by grilled crusty bread, this dish got gobbled up immediately. Order two; you won’t want to share!

Next, some dishes from their “Large Plates” menu: mustard crusted Canadian salmon over green onion risotto, maple brined double cut pork chop, and IPA citrus marinated chicken with jalapeno grits, wild mushrooms, and roasted brussels sprouts.

The salmon was flaky and tender, and the tangy mustard crunch of the crust was a delicious counterpoint. I’m not a fan of risotto, but I’d love this served over the brussels spouts that accompanied the chicken.

Speaking of the chicken…WOW. Who would think that chicken would be a star? Cask Republic’s was juicy, perfectly charred, and wonderfully accented by the IPA marinade. I highly recommend it.

Rounding out the meal was a thick cut grilled pork chop so juicy it made a bit of a mess…but that was a good thing. Flavorful, tender, and quickly devoured, this would satisfy any meat lover.

I came here with a small group on a Saturday night around 10pm. The place was pretty full but still had walking room which was nice. The inside is clean and nice with tables as well as bar service. There were a lot of people eating food but my group just got drinks. We were served quickly and the staff was really friendly. The prices were a little high, my glass of wine was $10, but a good time none the less.

I’ve been to this place a couple times, once for appetizers and once for lunch. The appetizers were good, there were a variety of things including flatbread pizza (that’s the memorable one). When I was there for lunch we started with the bar fries board which was great. I got the Cask Republic burger which was pretty good but I wasn’t super impressed, and the plain fries that came with were definitely lacking (I didn’t expect them to be as good as the fries board, but I was hoping for some flavor). I’d definitely like to have another go at their dinner menu if I go back in the future.

Pricey ($8-12 beer) but good selection for a small chain. This place is pretty trendy with 3 locations (if I recall correctly) and they specialize in some rare casked beer which is nice. Food is average. Come here for the beer but don’t come expecting great drink specials. Happy Hour doesn’t do well for people who work past 6.

My friend and I stumbled across this restaurant tonight and we were very happy we did. Great atmosphere, very friendly and attentive staff and best of all because we were starving the food was outstanding. Great Korean BBQ wings, Salmon and dessert was delicious. Will definitely go back again.

The food was great, and the best selection shows a lot of thought. I just wish the menu was picked with more flavor matching in mind. Everything tastes great on its own, but if you get two small plates they just aren’t as good together.

Since walked in staff was nice help with beer suggestions, gave us time to figure out what we wanted. The apps came quickly and were delicious quesadilla was very good and sauce top really made it, also had the Korean wings which were sweet and tangy but not overly sweet, just right. After finishing main food came out, I had there shrimp and grits with 2 over easy eggs which was a great way to end the meal. I will definitely be back

Came to Opening night at the Norwalk, CT location. Could not have been happier. Everything seemed to run like clockwork. Food was top notch, wait staff were helpful when deciding among the vast selection of Beer’s and wine’s on tap. Music and atmosphere was open and inviting, no crowded cramped feeling. Will definitely be returning for many more meals there.
