Spoiler Alert: One of the best breakfasts I’ve had in Oregon.

This little spot doesn’t look like much from the outside, or the inside. It’s a small, older café with a handful of tables. You order at the counter and seat yourself. Service was fast. We had three full plates of food in under 10 minutes.

Now let’s talk biscuits. You’d expect a place called Cascade Biscuit Company to do biscuits well… but “well” doesn’t cover it. These things are phenomenal. Fluffy, buttery, perfect. And the gravy? You could drink it straight. It’s thick like a milkshake and packed with flavor.

Everything we ordered was incredible, one of those meals where everyone at the table keeps saying “try this.” And if you go (you should), get the waffle. Trust me.

Average tasting brunch experience on the Main Street strip in Springfield, Oregon. Upon entering, you walk immediately to the back of the restaurant to order, similar to a fast food restaurant. I recommend trying the chicken and waffles – their waffles are Belgian liège style with sugar crusted edges. By far the best dish on the menu. Their famous biscuits were a bit too dry and their hash browns had way too much salt and pepper in them. Overall, I found the experience to be decent but there are other brunch spots in the area that I think do a better job.

I was really excited to try this new breakfast spot in downtown Springfield. But damn was it a let down. I’m not sure I understand the trend towards no table service. The experience was, in a word, chaotic. Having to stand in line to order (which you have to wait until a table opens up, causing a bit of confusion as new people arrive not to mention the waiting area is the bathroom hallway), get your own (luke warm) coffee from a carafe on a stand next to the register and then you have to bus your own tables in the end (don’t miss this step, the cashier will yell across the restaurant to remind you). When they got busy, they literally asked people to leave the moment they were done eating. Paying $20 per person (plus tip that we regretted giving at the time od ordering) for a meal served in a “fast food” environment that takes more than 20 minutes to be served – it’s just not a pleasant dining experience. On to the food…

If you want biscuits and gravy, you will be happy, but I strongly suggest getting it to go. The biscuits are fluffy and have great buttery flavor. The gravy is well seasoned and a good consistency. They do not ask how you want your eggs – so they all come out Sunnyside – which is only to say the yolk is on top. The eggs are rubbery and unevenly cooked because they sit under a heat lamp for a bit waiting to be brought to your table. The bacon is definitely good, but the sausage is pretty bland, as are the country potatoes. Portions are really big, so that’s a plus, but it’s just not enough to make us want to come back.

I’m really excited about this place. I ordered a bayou biscuit and I was very surprised by the Cajun gravy. It was delicious but it overpowered almost everything else in the dish and I was a bit bummed about missing some of the other elements. I wish the gravy was served on the side so you could choose how much you wanted and so the biscuit didn’t end up soggy. My friend had the Billie Nillie and it was super good! I definitely look forward to trying some of the other menu items.

We went to this new restaurant that is blocks from our house. We were excited for southern fare and when we arrived it was hoppin’. There was a long line and people were waiting for their food. They all seem to know the owners. They called them by their first name and the owners spoke freely with the group of people .
We ordered three things. We ordered a catfish po’ boy, beignets, and a bounty biscuit. The beignets were dark brown on the outside and puffy, but doughy and uncooked on the inside. The bounty touts a fried green tomato, pimiento cheese and a sunny side egg on top. The egg was sunny side but rock hard, the pimento cheese was missing and the fried green tomato was about the size of aroma tomato in a lot of dough. The po’boy was missing the sauce which made it very dry, the catfish was undercooked and pink and could not be eaten and the sandwich was missing the pickles. The pickles seem to be a big part of the show on the menu. We talked to the chef about the missing pickles and he seemed to think the rotating pickle was a dill pickle and then walked away without saying anything. But then another person came back was some pickles from a jar saying that they always forget about putting them on the sandwich. We provided some general feedback about the egg, undercooked catfish and undercooked beignets and the person we believe was the owner seem disinterested in hearing us and just wanted to provide our money back. No “sorry”, no “hope that you will come back and give us another opportunity”… Not even a comment that they’re fairly new and their processes need to improve. I think there needs to be a line person who double checks that everything is on an order before the order is sent out.
We also think that for the amount they charge, they should rethink the size of the food they provide. The signature item, biscuits, are more like drop biscuits rather than a breakfast biscuit. The table next to us also left their biscuit on their plates. On the upside, the presentation of food was very pretty.
Overall the meal was terribly disappointing. We hope that it gets better or it will be another hard worked effort for a restaurant that won’t last very long. We wish them luck.

Wanted to get dressed up and take my little one on a girl’s brunch…. Glad we picked this little spot. It has alot of potential. The feel in the place is small town. We love Biscuits and gravy so figure this might be our place. And we weren’t wrong! The waffle and fried chicken was mouth watering chicken moist skin crispy yet thin not alot of breading but sweet savory flavor. The waffles must have been caramelized with sugar of some sort because even without syrup they were sweet with a slight crunch but fluffy. And when together…. wow. Then the Biscuits and gravy…. all the reviews talking crap about the gravy…. never had actual homemade sausage gravy. Kate’s recipe reminds me of grandma’s house and the Biscuits again from scratch and make with love. Yes the prices is a bit high but when you go to a fast food place or a sit down chain restaurant and spend the same amount for proceeds slim…. I’ll come see Kate everytime! Just wish I lived closer it’s worth the stop and can’t wait to see the vibe just get better and better!

Hole in the wall place playing Bob Dylan and Tom Petty classics while serving up delicious breakfast food. Bacon is thick and crispy, fried chicken and biscuits are cooked to perfection. Portions are large and filling. Every element is well cooked and flavorful, raspberry jam, potatoes, eggs, etc. The mimosas are tasty, strong, and cheap. Service is fast and friendly.
