I love authentic Jamaican food, and when I see The Caribbean Hut Food Truck parked in the parking lot of the Staples store in Carbondale, IL, I always stop for some good food. The owner, Freeman, brings the flavors from his restaurant located at 300 S Maple, Cambria, IL 62915, to Carbondale and surrounding areas on the food truck. Let me tell you something: the food is fresh, hot, and flavorful! The service is always friendly and prompt, the ambiance created by eager customers is lovely, and the portion sizes are plentiful. I can usually eat my meals for two days. The food truck menu varies weekly, and the prices are very reasonable. I highly recommend you stop by when you see this little food truck in town or head to the restaurant. When you go by, tell them Kindra Speech sent ya!

We had a great first experience at Carribbean Hut.

The jerk chicken sandwich was large with a generous amount of meat! The plantains were a much thicker cut than I’ve had before, more like a potato wedge, which was a nice surprise and tasted great!

My boyfriend said the cabbage side was his favorite part of his meal, which I agree, it was some of the tastiest cabbage I’ve had!

Also, the jerk sauce was so good. I just wish it was a tad spicier!

We will surely be returning to this small but significant spot!

Bought myself and my son a meal to share and still walked away with half the container of food to take home. Food was absolutely delicious. If I wanted to risk stuffing myself to the point of being sick I would have kept eating just to enjoy the food some more. Definitely recommend this place.

The food is just good. I don’t really have more to say than that. I could literally eat my weight in that lobster salad. It pairs so well with the smoky and somewhat spicy jerk chicken.

I was not disappointed, the food is delicious. The owner “Yvonne” was very friendly! I had the po boy shrimp sandwich with red beans and rice with a side of plantains. The best I have ever had!! The price was reasonable. I will definitely be back. I only live two blocks away!

Overall their food is really good. The owners are super friendly! The prices are very reasonable for the amount of food you get. The menu changes often so you need to go to their Facebook page to see where they will be and what they will be serving that day. I highly recommend the jerk pork, but the jerk chicken is good, too. I have not tried many of their menu options due to the days I’ve visited their food truck is serving what I’ve already had. I got their ribeye today, which was okay, just not as good as the jerk pork. I highly recommend it!

I heard that the food was authentic.. food is not carribean. The rice tasted it like it was out of a $2 box. No where near jerk. They put sweet baby ray on the chicken with some other sauce that they coated the chicken with. Ate a few bites before throwing it out.

I’ve eaten with the Carribean Hut Family many of times over the last year, and the food has always been excellent.

My daughter told me about them approximately one year an ahalf ago, she loves their Jamaican Patties! We occasionally see them in Carbondale, Illinois at the local Staples store, so we sometimes stop by to get food.

Since I’ve moved to Cambria, Illinois about four blocks from their restaurant, I find myself eating with them regularly, because the food is so good. Try it, and I guarantee you will enjoy it.
