This celebrated concept from Mario Carbone, Rich Torrisi and Jeff Zalaznick pays homage to the Italian restaurant of the mid-20th century an era of seafood glamour, showmanship, and tableside service. The New York-inspired cuisine is influenced by that same time in history, but takes its culinary cues from the great talents and techniques of today showcasing elevated classics such as Lobster Fra Diavolo, Chicken Scarpariello, Veal Parmesan and Octopus Pizzaiolo.

Carbone had been on my list for a long time and while the experience and service absolutely lived up to the hype, the food unfortunately left me wanting a bit more. From the moment we arrived the service was incredible, our waiter was enthusiastic, explained everything in detail and made us feel genuinely welcome. The ambience is classic Carbone: dark, lounge-style, dim lighting and very “Vegas” in the best way.

The complimentary bread was great, and the huge block of parmesan with cured meats and cauliflower was an interesting touch. We started with the Caesar salad prepared tableside, which was a fun experience, but it ended up far too salty. I think the server got a bit distracted while chatting and overdid it. The calamari/baby squid was fresh and tasty, but nothing particularly memorable.

For mains we had the famous vodka pasta. It was nice and well cooked, and yes I’d eat it again, but I honestly don’t understand the hype. To me it felt like a good tomato pasta with cheese rather than something unforgettable. The standout of the night was the truffle ravioli. The truffle was brought out fresh from Italy and it tasted incredible, easily the best part of the meal and the saving grace of the evening. That said, at nearly $200 for the dish, I expected the pasta itself to be just as impressive as the truffle.

Overall it’s a great place to experience and tick off the Vegas restaurant list, especially for the service and atmosphere, but for such an overhyped spot I expected the food to be better.

I’m not sure of all the bad reviews, but our experience was great! The service was top notch and we had a table of 8. The food was great and we split a lot of dishes family style. I wish I remembered the name of the server he was amazing. The veal parm was amazing, spicy rigatoni was actually spicy. Off menu meatballs were amazing and my only minor complaint was the Caesar tasted slightly like horseradish. We also ordered the Chicken and peppers, which was great. Dessert was amazing. Love love love would suggest to anyone. The interior was super well designed.

Very tasty meal served by attentive wait staff!
This is a family style Italian where the intent is to share.
We had the mozzarella and peppers, tortellini with shaved truffle, spicy rigatoni, veal parm and sliced bone in pork chop. The bread basket was chock full of goodness but we somehow avoided dipping the delicious bread into all the sauce. Very good!

We ordered the meatballs, spicy rigatoni, and funghi. Our waiter Eric was very helpful and even gave us some cookies with a candle as we were celebrating free appetizers included a plate of salami. Pickled cauliflower and bread basket with several types of bread. The restaurant was pretty loud, but the atmosphere was nice. We were seated near the kitchen, so the waiters were coming back-and-forth a lot, but we were in the secluded alcove table so the noise wasn’t too bad.

I booked reservations at Carbone at the Aria for our anniversary about a month in advance, knowing it would be extra busy during F1 weekend. There was no wait when we arrived, and we were seated right away in a really cute booth. Our server was incredibly friendly and had great recommendations.

We were on a bit of a time crunch because we wanted to make it to the race in time for the performances and driver parade, but the service was efficient without feeling rushed. The caesar salad was prepared tableside and was delicious, and our server suggested an off-menu option, the meatballs, which were also excellent.
The lemon drop martini was fantastic, and the spicy vodka rigatoni was absolutely phenomenal—I would come back again just for that dish alone.

Overall, we had a wonderful anniversary dinner. Great food, great service, and totally worth the visit—even on one of the busiest weekends in Vegas.

I liked Carbone for dinner~ but I went in with high expectations, and they were not all met.
We waited 20 minutes after our reservation to be seated.
Starting strong, the fresh baked bread and salami were the highlights of my dinner and I would come back for just these.
The appetizers were nice. We got the meatballs and caesar salad. Caesar was really heavy on anchovies and garlic (our server did tell us that before ordering) and since the tables were so close together we did not get to see it made in front of us.
I was quite underwhelmed by the sides (potatoes and mushrooms)
The entrees tasted nice- The tortellini was wonderful, but the spicy rigatoni was a bit too spicy for my liking. I would have liked to ask if they could put less chili peppers in mine.
We were squeezed between two tables, and I felt like it was way too close.
Overall, it was a nice restaurant and fun experience- but I was not wowed like I had hoped. I had hoped for more with the amount spent.

Sooo I kinda was taken here begrudgingly, since coworkers have been asking to go for months. I want to be a team player. I want to try new things. I know I can get set in my ways so I decided to go, and I’m glad I did.

***I do have to say I originally wanted to remove a star because our reservation was 9:15 and they delayed our reservation to 10pm at 8:50. I do find this out of the ordinary and not ok for a restaurant around for years to do, especially on a Tuesday :/.

Anyway the tables and ambiance are wonderful. The staff were all amazing and pleasant. Some of the plates were chipped (2) which I’m generally ok with, but you have to remember this is a $$$$ place. Lastly, uhh the music was entirely rap. Biggie, Jay Z, De La Soul, NWA. Honestly I’m not mad since I expected Billy Joel and Volare so it’s a pleasant surprise. However some may not enjoy it.

Finally the food. Firstly I have to say. I’m from Long Island NY. I grew up with Italian American food, but it was not good Italian American food. Also since I ate it for twenty years, I never really went to Italian places one I got into fine dining. So yes I’ve been to 3 Michelin star restaurants but no high end Italian places. With that being said.

Everything I had was honestly the best version of it I have ever had. Best Caesar (I know it’s Mexican), delicious potatoes and vegetables, best vodka sauce rigatoni, transcendent Veal Parm, the old fashioned Manhattan was perfect. Bread course was phenomenal, melon and prosciutto. Every course I had zero complaints or notes. It’s not rewriting gastronomy, but I would be hard pressed to make these any better!!

Also, how can I forget, the cheese cake, tiramisu, and carrot cake (That ginger ice cream!!!! ). All completely nailed.

There are so few places I’ve eaten at where I couldn’t think of at least a few Meh dishes. Even my favorites in the world, so I defenitly will remember this place fondly.

However just to be clear. This place is expensive around 200 a person so be aware, but I’ve paid around the same or more for shitty forgetful meals, especially in Vegas. I think you will find Carbone worth your time, just don’t plan anything after like I did and almost be late to work!

From start to finish, our experience at Carbone was nothing short of outstanding. The service was impeccable. Every staff member was attentive, warm, and genuinely welcoming, which made the evening feel truly special.
The food? Absolutely phenomenal. The spicy rigatoni lived up to the hype. Perfectly cooked pasta with just the right amount of kick. The lobster ravioli was rich and flavorful, and the ribeye was cooked to perfection, tender and full of depth. Every dish felt thoughtfully prepared and beautifully presented.
The bread and cheese service was an unexpected and delightful bonus that really set the tone, and to top it all off, the birthday dessert was a sweet and thoughtful surprise that made the night even more memorable.
Carbone is everything you want in a fine dining experience: exceptional food, top-tier service, and a touch of magic. Can’t wait to come back!

Came in around 7pm and was told there was no space at the bar, so I put my name down for a 9pm reservation. I returned at 8:45, only to find the seat I had reserved had been given to walk-ins, resulting in another 15–20 minute wait.

While waiting, one of the bartenders was genuinely excellent and made a very good Negroni, which I was told would be comped due to the inconvenience. Unfortunately, I later noticed it was still charged on the bill.

Food-wise, portions were large but the quality didn’t justify the price. Beef carpaccio was fine but forgettable. The rigatoni was overcooked and soft, lacking the al dente texture you’d expect, and the meatball was decent but unremarkable.

To top it off, the bill was dropped abruptly with little interaction, and the promised comp never materialized.

Good cocktails, but inconsistent service, overcooked pasta, and being charged for a drink that was meant to be comped made the overall experience disappointing and not worth the price point.

I don’t know who hyped this place so much that at a point in time people reservations were being sold, in my experience this place is not worth it. The service was just ok, unless you are consistently drinking while you wait for food, you won’t be helped at all. You are sat in a small table with an inexplicably large menu that makes it so uncomfortable to be at the table. Once we got our food an hour later we made sure to order the popular items. The vodka pasta was good and well cooked but it was starting the curdle as it was not hot when it reached my table the salmon was very dry and cold and the fungi pasta was good. There wasn’t anything outstanding, from what we ordered, but I have no curiosity to try the rest of the menu, I wouldn’t go back to this location and I wouldn’t go out of my way to get a reservation not worth the hype and not worth your money.
