Wow, what a great dinner my DH and I had here on Valentine’s Day. We don’t live in the area, so we wanted to try a bunch of the small-ish plates and take home leftovers (die-hard foodies here). We ordered from the regular menu, not the special prix fixe of the day. Pork belly porchetta was cooked perfectly and served in a vinegary sauce with freshly made pillowy warm corn tortillas…spot-on delicious. Cazuela de cabrito had the texture of machaca and the intense flavor of lamb birria without the heat…sublime. The duck mole taquitos made us both cry happy tears of flavor euphoria. Roasted cauliflower was a little spicy and a lot flavorful, charred brussels sprouts with prickly pear and mango an amazing combination of flavors and textures. The coal roasted onion came last…it was sweet and smoky but next time I would ask for it to come with the other foods so we could combine. Tres leches cake was the best I’ve ever had, with little dots of citrus curd mitigating the sweetness, and the burnt queso panela with spicy honey was dreamy. Pricing is quite reasonable: With all this food and two perfect cocktails, our bill was only around $160. Oh yeah, the atmosphere was really nice—similar to Canon, one of the group’s other restauraunts, but with a Mexico-ish vibe and a cool unisex bathroom. The only thing I didn’t like was the over-scented mint hand soap in the bathroom, but this is a minor thing. I have not been to a restaurant in a very long time that nailed Every.Single.Dish! Even though we have to drive an hour to get there on a good day, we will be back soon. Absolutely top notch!

Wow! What a remarkable restaurant! Service with a smile, timing that was perfect. The feeling of a 3 course meal without the snootyness. The food was beyond phenomenal. Layered flavors and mouthwatering combinations. YOU WILL NOT BE DISAPPOINTED! I cannot find a single thing that could be improved, including the price. It was a great price for the culinary masterpieces that are served.

I brought my family yesterday for lunch. The service was top notch and the food was incredible. Bravo for hitting the mark right on opening day!
I can’t wait it come back… the drinks were solid, the salad, appetizers and main dishes were drool worthy.

So happy Folsom has this caliber of dining! We went for date night and absolutely loved the vibe, drinks and meal. We had high expectations given the two chefs both have a Michelin stars and they did not disappoint. The sea scallop was delicious and the skinless tomato was an unexpected surprise. I appreciated the accommodations to make the beans vegetarian, and they were fantastic. But the star of the meal was the asada cauliflower. Hands down, the best cauliflower with texture and flavor I’ve ever had (and I know a thing or two about cauliflower). We had the pleasure of meeting one of the owners and I can’t wait to come back to try all the other vegetables on the menu. Excellent menu and diverse with options for everyone. Well done!

I had the most incredible dining experience at Pedregal tonight! The ambiance was lively with a warm and inviting atmosphere.
I started with La Pila Margarita which is really good, the food was absolutely phenomenal! We started with the Caesar Salad, which was fresh and very surprising that the recommendation was to make it into a taco and was amazing! We also had the sope, tlacoyo and tetela, which were very tasty and flavorful
For our main courses, we ordered the beef tartare, the kabocha squash and the cabrito, which was cooked to perfection. Then I asked for the Seasonal Margarita that had pomegranate, very tasty which I enjoyed very much.
For dessert we ordered the buñuelo con queso and carajillos which was the perfect ending of our meal
I was thoroughly impressed with the quality of the food, the service, and the overall experience. I highly recommend Pedregal to anyone looking for a top-notch dining experience. We can’t wait to come back!

I knew this place would be awesome, but I didn’t know it would be THIS awesome! Since it was week one, there were a couple hiccups in our service, but nothing you wouldn’t expect early on in opening. Perfection will be achieved here, it’s clear. Overall, the kindness and care of the service was 10/10.
The drinks were legendary. Our bartender Chris, who we saw throughout the night even though we moved from the bar to a table, was kind, accurate, genuine, and knowledgeable. We had three drinks that were all talked about for the following days after our visit.
The food was incredible. Every single item was unique and exquisite. I intentionally stopped eating so I could take it home and relive the glory over the next 24 hours.
We will be back again and again, despite not living in Folsom, and I anticipate great things from the amazing partnership that conceived Cantina Pedregal!!!

Oh my GOODNESS we will be back. We went for the first time for dinner and I don’t think you can go wrong with what you order. Definitely recommend the guac. The Cesar salad with the homemade flour tortillas is a must. Save room for dessert! We had the tres leches and pecan pie, so yummy. Our waiter was so friendly, knowledgeable and attentive. The chef even checked on us twice to see how we liked the cauliflower and beef stew. Everything was bursting with flavor. I had a wonderful experience, thank you!

I am very fond of Nixtaco, and once I heard about this new place opening up in my neighborhood, I just had to go. Aside from the tostadas that were provided as a complimentary starter, we began ourselves off with the Cabrito Tacos and the Tlacoyo de Pulpo. The tacos were good, nothing too special (considering the price) and the tlacoyo was great, although I wish they added more octopus. As entrees, we ordered the Cazuela de Cortadillo and the Chicharrón de Porchetta. The meat itself from the Cazuela, with the combination of fresh nixtamal tortillas was absolutely delicious. As for the Chicharrón, although cooked beautifully on the inside, they over charred (not yet burned) the outside, as it was just slightly bitter. The aguachile verde that came with the Chicharrón was well overpowered with sourness, I’d definitely recommend them to go easy on the lime when making the aguachile. The dessert of our choice was the Mezquite Bread, and if we didn’t order this, I would’ve given my review 3 stars. This dessert truly was the “savior” of the night, I would definitely recommend this choice to end off your dinner. Overall, I don’t think I’d be back for a casual dinner, but rather for special occasions.
