A little slice of NOLA. Love us some southern food! The owner is wonderful, genuine, and knowledgeable. She remembered us when we came back 4 months later. You feel like you stepped back into New Orleans walking in here with the art, Mardi gras beads, and delicious smells! The crab au gratin and shrimp and grits are the two best things on the menu! My husband thinks the lamb is the best! The crab au gratin is heavenly, I’d love it if they made it a main course. The salad dressing is probably the best I’ve ever tried! The shrimp and grits are so flavorful! I also got the blackened catfish and crawfish etoufee which anything blackened, in my opinion, makes it that much better! I would say switching up the gumbo recipe would be great… Gumbo isn’t a tomato based dish, at least it wasn’t in New Orleans. It’s more of a brown roux. Other than that, the environment, the staff, and the food are all wonderful! We’ve taken two different groups and plan to take more!

Great spot to eat and see live music. I came in a day where I already had dinner but ordered the calamari and the shrimp+fries as an appetizer. Flavors were good and everything was fresh and cooked to order (I’m always hesitant to try creole/cajun food as my family is from New Orleans). Tracy Whitney and her band were absolutely phenomenal. And to end the night I ordered the beignets which were absolutely delicious. I know they’re refining the menu, have a staff shortage, and there’s a delay on many things but I know they’re doing their best during these hard times. I’ll be back to support this friendly establishment.

Absolutely delightful! We had the Crab Cake Benny, Chicken & Waffles, & the Bananas Foster Waffles. Crab cakes were rather tiny (1/4″ thick 1.75″ diameter), but delicious! And the dressing on the accompanying salad was AmAzInG. The waffles in the Chicken & waffles were rather disappointing, like some Ms. Butter’s Worth I make at home. The Chicken however was Perfect!! The Chicken was still moist, yet the batter was delightfully crispy & seasoned wonderfully, and didn’t get soggy at any point through the meal. Finally the Bananas Foster Waffles; absolutely wonderful no doubt, not too rich or sweet.
Atmosphere was good, honestly they could use carpet on the bottom of the tables &/or sound dampening panels on the ceiling. Towards the end of out visit, all but One table was full & it was LOUD. Couldn’t hear the music at all & was hard to hear someone sitting across from you.
All in All, we’ll be back & bringing friends for sure.

Delicious Cajun food in New Mexico. A new business that just opened up in Corrales New Mexico. Wonderful food at a great price. The beignets are a must. Gumbo is my favorite dish to get. French toast will fill you up. Is a great local restaurant.

Very nice Bistro. Grits and shrimp appetizer was very tasty. I’m not a fan of grits… but these are awesome. The Cajun Ribeye was so tender and seasoned great. Bread pudding dessert is to die for. Will be back. Great staff.

If you know Cajun food you will love C3’s Bistro. If you don’t know Cajun food you need to get to C3’s and learn all about it!

Yes, I know. It’s a trek to Corrales. Your momma’s info on that is pre-Paseo I-25 interchange. Paseo from there to 2nd, then north to Alameda, west to Corrales RD, then north to the Village. About 20 minutes from I-40 and I-25, aka The Big I! And believe me, C3’s is worth it!

If you live in Corrales, you have absolutely NO EXCUSE!

Spicy, tender, and delicious describes the Boudin appetizer and the Crawfish Etoufee over the Blackened Catfish. Go! There’s so very much to love at C3’s Bistro!

I didn’t think of pictures but everything looked and tasted delicious! The customer service was top notch! The owners are very attentive and super friendly! If you like Cajun food this is a must go.
