Wow, Butcher and Thief completely blew us away! After a dream honeymoon in France, I honestly wasn’t expecting to find food this spectacular in Las Vegas, but this place proved me wrong in the best way possible. The ambiance is classy yet incredibly welcoming, and the price point (~$100) felt totally justified for the quality we received.

The star of the show was undoubtedly the ribeye steak – it was simply outstanding. And that dirty rice? So unique, especially with the perfectly cooked egg on top! We also indulged in the oysters, which were fresh and delicious, the creamed spinach was rich and comforting, and the bread was the perfect starter. To top it all off, the Cherries Jubilee was a theatrical and tasty end to the meal.

Our waitress, Zahra, was truly fabulous; her dedication and approach made the entire experience even more special. We’re already looking forward to coming back, especially to sit outside when the weather warms up! We also received a surprise tasting of the Branzino, so we set our steak aside to enjoy this truly spectacular fish dish! Highly recommended!

To give you an idea of how special this restaurant is at pleasing its customers, they even brought us a tiny “coat rack” to hang my wife’s handbag (see photo)!

Amazing food and service! My husband and I had a date night here and had an awesome experience. We had the calamari for appetizer. My husband had the rib bye steak and mashed potatoes. I had the branzino and mushrooms. All were delicious!!! And desert was delicious too. We will certainly be back.

This is a fusion restaurant opened not too long ago in this brand new plaza. We came here to celebrate my son’s birthday. The place was busy. It features Japanese, American, and Spanish influenced dishes. They are all very tasty and cooked to perfection. We ordered two types of steaks (for birthday, of course) to be paired with the red wine we bought. When the server was making the introduction, I thought to myself it would have been easier for him to tell me what he doesn’t like. Next time we will come back for dinner.

The location is also great , conveniently close to Summerlin and the Las Vegas Strip, with easy access right off the 215 Beltway.

The restaurant itself is beautifully designed and truly impressive. The atmosphere feels upscale yet inviting, The space is stylish and welcoming, with a great bar, comfortable dining room, and a beautiful patio that elevates the entire experience.
You can tell from my photos that every inch of the design was well thought out. But the food of course is the highlight of our dining experience !

The food was outstanding from start to finish. Every dish was packed with flavor and made with high-quality ingredients. The steak was perfectly cooked, the appetizers were creative and even the burger felt elevated. The best burger ever!!!Desserts and craft cocktails were just as impressive, showing real attention to detail and execution.
The creamed mushrooms were flavorful and not heavy at all ( perfect side dish that pairs nicely with a Filet mignon) , and the fluffy warm bread was the perfect starter. To top it all off, the Chocolate Panacotta cake was so rich in chocolate flavors,but not overpowering sweetness.

They also carry great selection of wines, especially my favorite: Bordeaux !
The steak was the show stopper of the menu.

We have also met a Chef and restaurateur Cory Harwell, along with his extraordinary team, and the passion behind this restaurant is truly remarkable.

Overall: our dining experience was awesome. The service was excellent, the atmosphere was amazing and the food was delicious!
Butcher and Thief is an outstanding addition to the Las Vegas dining scene, and we cannot wait to return.

Impulsively booked Butcher & Thief for lunch.

Ordered
More Cow Bell ($16 x2): This cocktail had been unavailable in my first visit so made a point to choose it. Very boozy with a great noticeable browned butter nuttiness. Had two.

Butcher Burger & Fries ($24): Ten ounces of medium-rare grilled meat, but oddly the patty seemed to lack seasoning. Went out of the kitchen without the pickle; Matthew behind the bar quickly rectified the omission and brought a cup of slices. Cheese, listed on the menu as Cooper’s [sic] Sharp, tasted instead surprisingly mild. Bottom bun gave up the ghost halfway through. DNF. The fries though were still delicious.

Cranberry Jello ($12): Up front, I did not taste the tartness of cranberries. The fruit was quite subtle. The cream and crumble pieces were tasty. DNF.

Value: Average to below average for the food. Very high for the cocktails.

Service: Very cheerful and friendly from everyone.

Had had Butcher & Thief (B/T), located at The Bend across from IKEA, on my list. It was Matthew, also the mixologist maestro at Le Club by Partage, who let me know it was slated to open on Tuesday 16 December. Even better, this budget-friendly steakhouse was open for lunch. So, I went the next day.

Friendly hostess gave me free rein, so I chose the indoor seat at the bar closest to the outdoor area.

Gin Makes Me Sin ($15): Built by bartender Alex, delivered a welcome tartness with a lingering spicy buzz.

Pretty Fly for a Rye Guy ($15): Bartenders recommended; smooth, subtle citrus and sweet undercurrent, stealthily boozy.

Steak Cobb ($28): Recommended by Matt, substantial and shareable, loaded with seared meat cubes at the requested doneness and funky cheese chunks, intermingled with punchy tomatoes and onions.

Steak Fries ($12): Arrived hot in a metal fry box which retained the temperature of its overflowing contents. Exceptional light crispy battered exterior and light layered interior. Came with tasty Thousand Island-ish mild fry sauce.

Hard Days Night ($15): Liquid dessert. Very balanced across the vanilla, coffee, and chocolate, with a beautiful hint of salt.

Value: Most excellent for the delicious and generous food, strong drink craft, and welcoming vibe.

Service: Very engaging from everyone, highlights Matt and Alex behind the bar, plus with staff checking in regularly on guest experiences.

Atmosphere: Minimalistic in camo green, black, and tan; airy and spacious, lots of windows, with plenty of seating options -huge indoor/outdoor bar, large SW-facing patio, kitchen view, private room etc. Late 80s-early 90s music like Pump Up the Jam and Baby Got Back, with Beastie Boys and Tone Lōc on regular rotation.

Facilities continued the theming of the main floor, with the bonus of having several amenities on a tray between the sinks. Would hope for the eventual installment of bag hooks in the stalls.

Must return for the Cranberry Jello dessert.

My boss sent me this review of the visit he had with his wife for dinner tonight. He’s not much of a review guy, but I thought it was something that needed to be posted.

So this place is a must try. 8.5/10

The vibe. 8/10
The vibe is cool. It’s in the bend by IKEA and there is a lot of cool spots in here. The restaurant has high end vibes without being crazy expensive (it’s not cheap but nothing crazy). It’s not crowded and laid out and decorated well.

The service. 7/10
The service was good but not the best I’ve had. No complaints but far from a very high end steak house but it’s kinda what I expected. Our server was nice and personable. She made recommendations only after asking us qualifying questions. Good not great.

The food 9.5/10
The bread 7/10 looks better than it was
Beef tartare 9/10 great, sneaky spicy
Cheesesteak egg rolls 8/10 crunchy, salty, exactly what you want out of these

My NY strip 8/10 slightly over cooked but very close to one of my top tasting steaks tho. Maybe if the temp was right
Stefs zubaton 9/10 cooked perfectly, Wagyu, only complaint was there wasn’t enough.

Garlic mash 7/10 what you expect on flavor but kinda thicc
Creamed spinach 9/10 it came out cold. Would have been 10 if not cold.

Drinks are $16 each and all were very good

We didn’t get dessert because nothing stood out to us and we were full

I would definitely return and it will be in the rotation for regular visits.

Easily The Best Steakhouse off the strip! I only hope this place doesn’t become a thing because its so dope. Food is amazing, the mushrooms were perfect and the staff is outstanding in every way. I cant wait to eat there again. Dylan was great and looked out for my fam with every ask. I cant recommend this place enough but shhhhh keep it a locals secret

First off entrance was a little confusing coming from the parking lot.

Restaurant wasn’t too busy around 8 PM. Table was ready fast.

Server was kind but no introduction to the restaurant and what they are known for or what makes them worth dinning with them.

Water took a while, soda water was brought in glass. Bottle was not offered. (Party of two)

Table they sat us at was through a door/glass wall separating part of the restaurant. I don’t understand that concept. Kind of ruined the ambiance for us. Music can be to loud with all the other noise due to certain songs. Chairs definitely are not comfortable, makes you just want to eat and leave fast.

For the food, we cant complain. Food was brought out at a great temp. Not salty and not over done by spices, sauces and etc. flavor was great.
Calamari, Brussels sprouts, Mac and cheese, flat iron and bavette.

Meat was cooked perfectly to our needs.

Would I recommend, maybe. But I would go back but not in a rush to. It being categorized as a steak house it needs a little more to be one.

2 people, $85 a person three glasses of soda water and one mocktail, app, two sides and two meat plates.

This place is absolutely amazing. First of all, if you’re going to come to a steakhouse, get some steak! I see the negative reviews about rigatoni and bread, but I have YET to see a bad review on the steak. I come here once a week, maybe twice a week and everything is phenomenal! From the food, to the service, to the ambience. Zara (server) is super knowledgeable and friendly and Andrew/Matthew (bartenders) are equally friendly. I would recommend reserving seats on the chefs counter so you can watch the back of house team in action! Everything is made from scratch.
Love the Zabuton! It’s so juicy and marbled in seasoned so well. If you like fish you can’t go wrong with the Branzino. Always get the hamachi crudo, (the sauce is to die for), the oysters are fresh, and the mashed potatoes (we add cheese) is absolutely amazing. Or all you bacon lovers I recommend you get their super thick cuts of bacon on the grill. And to finish it off they’re banana cream pot and the chocolate cake… Sooooo delicious. Especially the chocolate cake (hint: get it with a scoop of sour cream ice cream). And also for people complaining about their prices it is so super reasonable!!! I just pray they don’t raise the prices because a dinner like this on the strip would be triple the price. The bar is very extensive and if it’s a nice day you can sit outside. All in all, I would give Butcher and Thief 11 stars!!!
