We finally made it out to Bubby’s BBQ in Smithville, and WOW — hands down some of the best BBQ I’ve had in a long time!
We ordered the brisket, turkey, habanero ribs, pulled pork, their famous TX Twinkies, and Gigi’s potato salad — and every single thing was incredible. The brisket was perfectly tender and packed with flavor. The turkey was juicy (which is rare!) and not dry at all. The habanero ribs had just the right kick without overpowering the smoky goodness. The pulled pork was flavorful and moist, and those TX Twinkies? Absolutely next level. And don’t even get me started on Gigi’s potato salad — it was the perfect side to tie everything together.
If you haven’t been to Bubby’s yet, you need to get there ASAP. It’s worth the drive and then some. We will definitely be back!

I have had all the “greatest bbq” in Houston area, nothing comes close to this brisket at Bubby’s. It’s got the most amazing fragrance of smokey wood and none of the gasoline smell. Yes they actually use wood. The moist brisket is not fat. The fat is trimmed properly. The cream corn…. I tasted the pork, sausage. They are equally amazing . Omg so perfect in flavor. I had a pork bowl with shredded pork over Mac & cheese and jalepeno corn. Super relish.
Hubs had the pulled pork sandwich which he deemed “perfect.”

I heard the tale of Bubby’s for a long time, and our experience with the local Bastrop barbecue was always that it’s convenient but never better than a homemade smoke. These guys finally beat us out; everything you hear about Bubby’s is true, and they have really competitive prices to boot, it’s almost too good to be true. You do need to get in earlier than later as they do sell out quickly.

Had another great experience at Bubbys! Brought a friend in town from Estonia to have some texas BBQ and they really knocked it out of the park! Service could not have been better and now they even had items on the menu i have not had yet and cant wait to have again! Loaded baked potato was delicious!!

Fantastic, family-owned place to eat in Smithville! Located in what was once a garage/filling station, make sure you pay attention to the traffic light in the front window. If it’s green, you’re in for a treat. Once it’s red you’ll have to come back another day for the experience. The owners are customer-focused, staff is welcoming & the overall family-style dining area feels open and breezy, even with the garage doors closed. We had incredible, melt-in-your-mouth brisket, juicy sausage and a beef rib to die for. This BBQ needs NO sauce, but the two different sauces, each with its own unique flavor profile, are a great addition.
The coleslaw is made with a mayo base and a bit of the sauce and is a great side. The jalapeño creamed corn is delicious! Please don’t ever take this off the menu.

Best bbq we have had, since moving to Bastrop almost a decade ago! The turkey and brisket will melt in your mouth and let me tell you about the ribs…… It’s almost frustrating how they fall off the bone and the flavor is out of control! The potato salad, coleslaw, pickles, onions, bread, and all of the sauces are delicious, as well! We will definitely be back!

Absolutely the best chicken I’ve ever had in my life!! Ribs & turkey are amazing too!! I tried all the sides also. I give it all 5 stars!! It was so good I had to get an order to go to take to my friend to try. Super nice down to earth owners that make you feel right at home. Hard to find places like this these days. Great BBQ shop all the way around. The mac-and-cheese was some of the best we have ever had. Everyone was friendly and we enjoyed talking with folks while we were there. Good reason to take a drive on a two lane road and end up here.
