We started with a salad, which was fine, and the morcilla, which was genuinely delicious. For the main course, we ordered the house specialty, the suckling pig and the lamb. Both were soft, warm, and full of flavor, very well prepared. For dessert, we had the cheesecake and the crema catalana, both excellent. We also enjoyed a bottle of wine.
The atmosphere is interesting and very traditional. There are many tourists, which is expected, but we were seated in the basement area and got a great table. That space felt especially unique, knowing the restaurant has been operating since 1725. I really loved the old interior, the details, and seeing the different rooms on the other floors.
A very cool experience and definitely worth visiting at least once in your life if you’re in Madrid.
Stepping inside, Bolton is like traveling back in time. The rich oak wall scarred by centuries of history, create a warm, prestigious atmosphere, stepped in tradition. The top rated service is truly matches the setting; every staff member made us feel welcome and warm, contributing to a wonderful and enjoyable meal. Everything, from the excellent wine selection and appetizers down to the entrées, was superb. Our only regret? We order individual serving of famous roasted suckling pig, instead of the larger, whole pig portion(served 6 ppl)– definitely something to remember for next time! This is a absolute must visit when in Madrid.
We started with the chicken and ham croquettes, which were crispy on the outside and creamy inside — a solid and enjoyable appetizer. For the main course, we tried their traditional roast suckling pig, the restaurant’s signature dish. The skin was perfectly crisp and golden, while the meat was incredibly tender, juicy, and full of rich flavor — clearly prepared with great care and tradition.
We also ordered the grilled veal filet, which was cooked beautifully, tender and well-seasoned, with a delicate flavor that made it a great complement to the heavier roast pork.
Of course, we paired everything with sangria, which was refreshing and well-balanced. The ambiance was very charming and authentic, the service was excellent, and the atmosphere was relaxed without being too loud, making for a comfortable dining experience.
Overall, a memorable experience with fantastic food, historic charm, and great service — highly recommended.
Reservations are highly recommended. We got there half hour before opening and made the line and we were fortunate to have gotten a table without a reservation.
Once we were seated, we were greeted by a host and waiter. Within minutes we ordered our drinks and food.
Tremendous dining experience. From the vermouth to the appetizer and the main entree, everything was delicious. The Roast Stickling Pig in itself is worth the visit and a must. The Cozido soup is another must. Wish we had places like this back home. Will definitely be visiting again next time I’m in Madrid.

The service was excellent from start to finish. The staff were friendly, attentive, and eager to help with recommendations, which turned out to be spot on. Despite having a reservation, we did have to wait in line outside, but it moved quickly and efficiently — nothing to worry about, just part of the experience at such an iconic place.
Now, let’s talk about the food:
The Cochinillo (roast suckling pig) is without a doubt the star of the show — tender, flavorful, and cooked to perfection. It’s clearly a crowd favorite, and for good reason.
For dessert, the Tarta de Queso was an absolute standout — rich, creamy, and probably one of the best I’ve had.
We also ordered wine and sangría, and while both were enjoyable, the sangría really stole the spotlight — perfectly balanced and refreshing, a great match for the meal.
Overall, Botín lives up to its reputation. The food, service, and historic charm all come together for a special dining experience that’s worth the visit. Whether you’re a tourist or a local, it’s a place that should be on your list at least once.
