In November 2014, award-winning Chef Hosea Rosenberg evolved his esteemed Boulder, CO catering business, with a food truck and farm, into a long awaited, brick-and-mortar restaurant, Blackbelly. The eatery was quickly identified as a Boulder essential, and elite dining destination in Colorado. Its immediate popularity triggered an expansion just over a year later, with Blackbelly Butcher and Market: Boulder’s only whole animal, artisanal butcher shop and first independent retailer licensed to make and sell its own cured and fermented meats. The shop also offers an expansive selection of house-made provisions as well as breakfast and lunch daily.

Damn good sandwiches. Best on Tennyson, although I know Eloise is popular it is not as good unless you are a huge fan of Texas toast and it is more expensive . Have tried twice and will probably keep going back until we get through the whole menu. Sorry my pictures kinda suck.

Small shop selling provisions and great burritos! Got the Butcher Burrito, daily meat was smoked pork when I was there. Great flavor, tots gave a surprising crunch so they’re fresh, and the hot sauce is just the right amount of heat to go with the whole thing. You wouldn’t expect it, but the chocolate chips came highly recommended: crispy outside, soft and gooey inside, not too sweet and balanced with flakes of salt. Perfect if you need something after the hot sauce.

When they first opened they kept “the bacon” sandwich on the menu from the previous restaurant. The absolute best sandwich in Denver. Just visited last week and had the absolute worst BLT of my life. Burnt bacon, hard bread. I’ve heard great things about the rest of the menu, but it’s hard to look past this failure on such a simple sandwich. For nearly $20.
Also, the salami is very overpriced. Order any and all salami from Il Porcelino Salumi out of basalt. Do not waste your money on the shriveled meat stick offered here.

The food there is amazing, they have a ton of seasonal options and specials. The homemade Arnold Palmer was so good. The service was great, all of the crew were amazing. The food was out hot and prompt. Luke, the gm, was considerate of my father with mobility problems. He even offered to exchange my Arnold Palmer for another free of charge if I didn’t like it.

Stopped in for a breakfast burrito. The meat of the day was chorizo, which blended into the burrito without overpowering the green chile, eggs, and hash. House hot sauce was an arbol base with a surprising amount of spiciness. It’s worth getting a breakfast burrito if only as a vehicle for enjoying the hot sauce. Definitely the highlight of the meal.

We were so impressed with breakfast, we almost stayed an extra 45 minutes to wait for the crossover to their lunch menu. Instead, I settled for grabbing a few pieces of their house jerky.

Staff were quite friendly, offering insight to the food and joking with me. They seemed to be having a good time, always a good sign.

I look forward to my next visit down Tennyson. This is a great addition to an already amazing couple of blocks.
