I’ve lived in Co Springs for 5 years. Bird Dog is down the street from my house. Today’s the third time I’ve tried it – I wanted to give them a third shot, as it’s been about 2 years since I’ve been and I thought – it just can’t consistently be THIS BAD every time. But it is.
First off – I really want to support local businesses and I gotta give them two stars instead of 1 because they’re super friendly and have a military discount.
But WHO SERVES BRISKET LIKE PULLED PORK?! In the 50+ BBQ Restaurants I’ve been to, never have I ever seen Brisket served like this. They don’t ask if you want Lean/Fatty (flat vs point). They just give you a small pile of dried out pot roast looking meat. I need to wash my mouth out with Arby’s across the parking lot to get the bad, dry taste out. There’s no bark. The menu should say “Disappointment by the pound.”
If there were 10 BBQ places in Co Springs, this still shouldn’t make the top 10. Somehow they claim it’s voted the “Best BBQ in Co Springs…” But I can’t imagine at what. Maybe they have the ribs down? I haven’t tried them.
The spicy sausage Is pretty decent – I’d give it 3 stars. But it’s TEN DOLLARS for one sausage link.

They say their BBQ is Oklahoma style, its really TX style, smoked without dry rub or any sauce and then served with the sauce on the side. Not my preference for BBQ, but its not bad. The turkey, spicy sausage and Mac & cheese are all really good.

I’ll start by saying the staff is great. Always has been. We’ve been going there for many years. The past few times the rest of the experience, not so great. Definitely an issue with the ventilation system. Visibility smokey in the restaurant. The bigger issue is food consistency. When you’re paying that much for a sandwich it better be great. The past few visits, the brisket on the sandwiches has been barely pulled/shredded, leaving large chunks of meat to try to tear through. Make the extra effort and do it right.
The service, and the food were above and beyond. Everyone there was exceptional, the food is delicious… I don’t have the words to describe how heartwarming it is when, in a time where life is so difficult for so many people, such consideration and great service remind me that there are plenty of reasons to smile, even in times like these. And having delicious barbecued meats and great food definitely helps too! 🙂

Update: we have come back several times now and the food is as good as always! This has become a favorite spot to visit when we are in town. It even gets a thumbs up from all my kids- not an easy feat.
I ordered the pulled pork sandwich with Mac n cheese and my husband ordered the dog house and Mac and cheese. They were both delicious sandwiches, the Mac and cheese was super cheesy and creamy, and their barbecue sauces are just delicious, especially the wasabi mixed one. My only critique is my plate looked half empty and like a cafeteria appeal. I know I ordered the “basic” plate but having 3 spots in the plate makes me think it’s missing something. My husbands plate on the other hand looked way more appetizing and full.
Overall though, great service, atmosphere, and food. I recommend Bird Dog!
