Job the Chef is basically a Supertaster with the utmost detail in every bite.
Why Top-5? This is not some crazy overrated hyped up NY restaurant from marketing. This is DAYS OF PREP to serve you now level of cooking.
What an experience. Joe Describes each dish with perfection. All the herbs and spices come from their gardens. The menu is different about every other month. They cater to the season, temperatures, herbs in season and more.
It’s and Experience to eat here. There are only a few tables and seats.
MUST MAKE A RESERVATION.
All and all…I have dined all over the world. Had what was called the “best” then truly dove into cultures to find the best.
When I personally put this in my Top-5….
It’s my Opinion that this little hands on experience is a true global top five for flavor, prep, attention to food detail, foods that take time to make, and much more.
I am not one that is impressed by the glitzy atmosphere to make up for average food. Nor one that falls for “history” to be the reason one should love a place.
I look for true craftsmanship in the food and its flavors.
Bin6South NAILS IT
If you’re looking for a unique dining experience off the beaten path, this new spot downtown is a must-try! It’s a cozy place that seats only 12 people, which creates a wonderfully intimate atmosphere. The service was superb—it’s actually pretty cool to sit next to strangers and strike up a conversation.
The food was outstanding! We tried the bread with carrot butter (a delightful surprise), the duck, the fish, and capped it all off with dessert. Everything was fantastic. They also have an incredible wine selection, and Hanna was so helpful in guiding us to the perfect pairings for our meal.
They host small events like wine tastings, which I’m excited to try next time. We’ll certainly be back! Highly recommend checking this place out if you’re in the area.
The dishes were each so unique and the recommended wine pairings elevated each dish to an even higher level! One of the top meals we have had in the last few years and one of the best ever in the Tampa Bay region! This is a must visit! And when you do, be sure to ask the chef and staff what they are most excited about! This question led us to try some unique dishes that we wouldn’t have necessarily ordered on our own and they were the best bites of the meal!
Ps…Don’t sleep on the sourdough!
If you’ve ever wondered what it’s like to eat in a dimension where Michelin stars rain from the sky like parsley flakes and culinary angels sing over every bite, then congratulations, you’ve clearly been to Bin 6 South—home of Kelsey, the undisputed heavyweight champion of chefs in St. Petersburg. No contest. Don’t even bring up your cousin’s “famous” chili. Sit down.
Appetizers or Foreplay? Yes.
Let’s start with the Marinated Olives. Citrus zest, chili, rosemary, and olive oil? I don’t know if I ate them or if they whispered ancient Mediterranean secrets into my soul. I briefly considered proposing marriage to a Kalamata.
The Housemade Bread Duo is a carby miracle sent directly from the gluten gods—one side fermented garlic & honey butter; the other, squid ink sourdough with nori garlic butter. I licked the plate so thoroughly, the server thought I brought my own dishwasher.
And don’t get me started on the Bin Board. It’s four seasonal hors d’oeuvres, aka four edible love letters from Chef Kelsey. Honestly, it made me question my life choices. Why am I not a seasonal hors d’oeuvre?
Hot Appetizers? More Like Life-Changing Events
The Roasted Sunchokes made me want to call my parents and thank them for raising me with taste buds. The Farro & Mushrooms combo tasted like a creamy forest hug—rich, earthy, and suspiciously addictive. Kelsey probably has a fan club of mushrooms.
And the Dumpling Soup? It was so umami-packed, I blacked out for 37 seconds. When I came to, I had achieved inner peace.
Entrées – aka Kelsey’s Final Flex
Let’s talk about the Venison Tenderloin, which was so tender I suspect it got therapy. Paired with horseradish sweet potato puree and fermented mushroom cream sauce, it was like if a campfire had a degree in French cuisine.
The Pan Seared Scallops? They tap danced on my tongue while wearing little lemon-scented top hats. The fermented vinaigrette could convince a die-hard carnivore to hug a fennel.
Even the Gigandes Bean Cassoulet had me texting my ex just to say, “You missed out. On this. On me. On this bean cassoulet.”
Final Thoughts
Chef Kelsey is not cooking, she’s casting spells. This isn’t dinner—it’s a spiritual awakening. If you eat here and don’t feel compelled to write poetry to a parsnip or legally adopt a sunchoke, then I don’t know what to tell you. Maybe you’re just not ready.
Bin 6 South is the truth. Kelsey is the prophet. And I am now a devout follower.
