In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas. We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. Stopped in recently and had a mixed experience.
Pros:
* Greeted by friendly, warm, welcoming staff right away
* No wait time, which was great
* Salad/topping bar looked fresh and well-stocked
* Plenty of seating available
* Portion sizes were generous for the price
Cons:
* Staff appeared young and somewhat distracted; it took a surprisingly long time to get two drinks filled
* Bathrooms were dirty and clearly needed attention
Overall, the atmosphere and value are there, but some basic operational details — especially cleanliness and attention to service — need improvement to match expectations for a well-known Texas BBQ chain.

I’m not the one to leave reviews but this was just beyond me my child’s order didn’t come with the gravy or brownies and then “managers” had no desire or enthusiasm to help me get a refund after finding a HAIR in my child’s buckaroo meal. They looked at each other as if they were lost and neither one of them wanted to help… the young lady had to call twice for a manger idk if it’s just bc it was busy or this location is going down hill but I don’t think I’ll be back to this location. Very disappointed

This not usual but from reading the reviews not even worth to go to the manager. First thing that has been happening young man that working the drive thru today Sunday oct 26 around 11:00am. Not the first time he drops money on the side has us get out the car get it. Two we order a pumpkin pie we got it but when, we got home, we notice a there was a figure print on it. Like they poked into it. Really this so unprofessional, gross.

I was really disappointed with Bill Miller’s upon seeing my plate, I mean where’s the food talk about shrinkflation! The food was just okay, the sausage tasted good but come on look at the picture it’s a little ridiculous. The green beans were a different story there was so much added things like very hard bacon pieces and hard chunks of brisket that I had to pick through just to get to the little bit of green beans that there was. The beans I mean what happened, is there a pinto bean shortage that I’m not aware of? The sausage portion seemed small, only three little links. It seems like Bill Miller’s is giving us less food and expecting us not to notice, which in my book isn’t right… I’ll take my money elsewhere thank you very much.

Absolutely insane and I’m not one to complain. The sandwich is about 6” long with a few slices of meat, the fries are half full and the barbecue sauce is extra watery. I thought they had given me a kids meal… Definitely not going back there’s always something missing or wrong with my order at this location.

Came in on Super Bowl Sunday for dinner and this worker was very nice and respectful handled my order without any problems not a lot of employees care about their job but she shows she cares 100% thanks for your great job

Today is Thursday Oct 16, 2025 @3:25pm I walked in the “to go” side and ordered (from Cyrus) a 10pc chicken family meal with a bucket of tea… Asked for toast bread (BREAD WAS COLD AND NOT TOASTED) asked for 5 set ups (GOT NO SET UPS) not to mention.. I paid $32 and got a handful of fries and had to ask “where’s my tea?” I called and spoke to Andres “the manager” he said in a condescending tone that he would take care of it… Which sounded like I was “bothering him” I said ok thank you and he didnt say anything he just hung up. NEVER GOING THERE AGAIN! It’s not like it was busy. There was on2 person behind me and thats it! Besides the flies that were in there!

I always try to be fair when it comes to service. However after reading the past few reviews seems like there’s been a change in staff. I get it’s the end of the day and everyone wants to go home. I’m sure there’s so much to be done at closing. Twice within three weeks I go through the drive up and order two #4 and when I get home theres NO GRAVY!! I called and asked the employee are they NOT including gravy in the meals anymore??? I know it’s just gravy but really it’s not just gravy it’s part of the meal. If you know you know. The first time this happened the lady was very apologetic and offered to remake my orders. This time around whoever answered didn’t really care. Just handed me the gravy and shut the window. Yes, I drove back both times to get the gravy for my kids. I just wanna know why are they not including the gravy in the meals?? I’m paying $9 each meal and we all know they have down sized on the amount they serve. Can anyone explain??

Absolutely upset with Location #5. We went to this location to order a 15 piece meal, tea, brownies and pie. Knowing that I was going to spend a good amount $51.77, I was ok with it HOWEVER once I got home the 15 piece that we received was All Dark meat, and No white meat. This place continues to do this and it just seems like they do not care of what they’re handing out to the paying customer Nor do they care about what your family will consume. The quality of what you’ve ordered just doesn’t matter anymore. While trying to provide my family this meal all we could taste was the oil to the chicken since the breading was missing on half of the order…Overall Very Poor Quality. I also asked for extra pickles and onions and for this big order only received 2 packets of pickles and onions. Like what do you tell your family at this point. The pickles and onions are really not a big deal, but when you’re a consumer and you ask for these items, it’s for a reason, its too enjoy the meal you’ve purchased. Overall upset that this location continues to disappoint.

When the line is long you should really have an employee outside taking orders like most of the other locations. I was very disappointed with my fries, which is one of my favorite menu items. They didn’t seem fresh so were not enjoyable at all. Also, it’s called vegetable beef soup not vegetable rice soup. There was literally only one small piece of meat in my soup. I will return to my preferred location from now on.
