In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas.
We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. I want to share how quickly and efficiently they handled a last minute online order cancellation. I called and was accidentally disconnected and immediately received a callback and the manager handled my request very quickly and reassured me I would receive an email. Sure enough, I received an email shortly after my call! I appreciate the quick action to resolve my concern. Plus the food is great!

Stopped in here for dinner while traveling. Everything tasted great. I got the 2 meats with pork ribs and brisket plate and 3 sides. For the price, I felt it was a good deal as I’ve paid about $8-10 more at other BBQ places.

This place was a let down to say the least. Local reviews showed positive, so I decided road give it a try. The establishment is clean and well kept for the most part and the staff was friendly. But that where things changed, the food was served hot and fresh, however not that good. I had the 3 meat plate (Brisket, Turkey and ham) the turkey was the only thing worth eating and no discernible smoke on it. Brisket and ham were bone dry. Im a mac and cheese lover and I threw this away. On the positive side that was the best glass of tea I’ve had in a long time, I wish I could’ve taken the whole container. Overall I’m sure the locals enjoy this place but that is not what I call BBQ. I won’t return simply because Dickeys is better BBQ then here.

Normally I don’t have a problem with Bill Millers, but today it was just not good. We ordered 3 tacos, 2 bean and sausage on corn tortillas since they said they have corn and 1 bean cheese on flour. Well bean& cheese was cold and hard torilla. I dont know what kind of corn tortilla it was, but it was so hard and not chewable, plus no flavor whatsoever. Really a waste of my money. Like I said most times food is great. Just wanted to express my thoughts.

Bill Miller has been our go to for breakfast tacos, but recently, the quality has taken a turn for the worse. We ordered a dozen tacos and we understand an occasional skimpiness, but today made us have to change our taco run to a new restaurant. The bacon and “egg” taco had one spoonful of egg. The bean and “cheese” taco had almost no cheese at all. Either raise your prices or start serving tacos that are worth what we pay. Do not recommend.

The prices are higher than they should be for the border line quality of the food. The employees don’t care if your order is correct. There are other places that have higher quality food for similar prices. I will not be returning.

Came in wanting a salad but brisket looked too good. Ordered a two meat plate that came with a chicken breast and wing and about 4 oz of brisket. I always like their onions. They have some type of spices on them and maybe vinegar? Not sure but they are good.
The meal was $14. About average to me for a chain Bar-B-Q place. I would come back.

Updates Nov 2025. Again I get charged for soup “no rice” and get the charged for the rice separately. Because I ask for the rice on the side. They say the rice complimentary yet I am being charged. I will continue to update my experiences.
Update October 2025. I wait all year for the beef vegetable soup. Today it was yummy as expected. The beef was a bit tough though. My issue is I was charged for rice that comes with the soup. I always get the rice on the side because I don’t like the bell pepper in the rice. They always give me a small portion on the side. This time I was upcharge 2.25$. I only add a couple of spoons in my soup. I don’t care for too much rice in my soup either. The pictures shows how much I used. Paying 9$ for a small bowl of soup is a bit much. Other than that they always get it right here.
Food was good, but service wasn’t what it usually is. I was also disappointed with the amount of beef in my soup. I LOVE the beef vegetable & usually it’s great, but there was literally one piece of beef in it.
