If heaven on Earth is possible I think it may exist in the brisket at Barbs B Q in beautiful, historic Lockhart. Moist, tender, perfect char. There is absolutely no need to use BBQ sauce. Eat the brisket as God intended. The ribs, perfection. A tangy sauce, the meat falls off the bone. The sides…the green spaghetti with poblano peppers and cream as the sauce. Excellent. The potato salad and charro beans were also top notch and the corn bread. Wow. Everything is great and I will come back. The nearly 90 minute queue felt easy, with free Lone Star beer provided and the staff is warm, caring and seem to love working there.

Barbs BBQ absolutely blew us away. The brisket and ribs were amazing, and that green spaghetti? Unexpected and yum. Every bite was worth the hype.

That said, the ordering process was tough. We got in line right at 12:00 on a Sunday and didn’t sit down with food until 12:40 — and there were only eight orders ahead of us. Like many BBQ spots, the line feels like a long and somewhat unnecessary process. With a more organized system, they could serve so more people (and make a lot more money) without sacrificing quality.

The food is outstanding — truly. But it would be hard to commit to that line again.

Holy molly!!!! I came with the very high expectations and Barbs-B-Q went above them!!!!

The food we ordered :Brisket, Pork Ribs, Turkey, Green Spaghetti, Pork Stew, Potato Salad, Maxican Chocolate Pudding, cornbread. ALL GOT 100/100! How could you do that? You guys are amazing. Brisket melt in your mouth, pork ribs is exceptional and had secret lime zest, all sides are perfect and completely compliment the meats

The pitmaster – owner was very very sweet, she took time to have light conversations with us. I got to take pics with her too. Another partner (I think) was very nice and proud about their food!

Despite the place is small, the staff were attaintive. They arranged all seatings so that you get seats right away after ordering

To negative people: I don’t understand why people complain about long line, or small place. This is one of the best BBQ experiences in your life. Also making BBQ is a tough job, please open your mind about it.

We had heard about Barb’s but had not tried it yet. On a Saturday morning we got in line 30 minutes before they opened. About 15 minutes before opening an employee came out and explained to everyone what they had to offer and how everything was going to work Once they opened at 11:00 the line moved slowly but efficiently because everything is weighed to order. We ordered at 11:35 and dove in to the most delicious tray of meats and sides. The lamb chops were so well seasoned as well as the chicken, brisket and jalapeno cheese sausage which had great smokey flavor. The charo beans were actually black beans with bacon, hotdogs, and onions. The signature green spaghetti is also a must try. We were too stuffed for dessert and took home some leftovers for the next day. The brisket had a great bark and was the perfect blend of moisture and tenderness. It lived up to the hype for sure. Well worth the wait.

I’ve been wanting to checkout Barb’s for awhile so we stopped on the way to Corpus on Friday. It was less crowded than expected but probably because the bbqfest was two days later. We got there at 10:30 and were about 20 in the line. We got our food at 11:30 and got to briefly meet the owner Chuck as she was at the main/chopping location. Everyone was super friendly and welcoming before, during, and until we left.

We decided to get the Tray for two to make it easy and because it was a good deal and included everything we wanted, plus some. Its 1/2 lb of each turkey, brisket, and pork ribs, with 2 sides and a dessert. We got the green spaghetti and upgraded to a bigger size and then the pork stew and the cobbler.

The pork ribs, pork stew, and cobbler are spectacular. Brisket/turkey/green spaghetti are pretty good, in my opinion. The green spaghetti was actually really good leftover too, better than fresh. The only thing I didn’t really care for was the sauce. Its sweet and I didn’t care for the flavors either.

It’s in my top 10 and I’d like to come back and try the beef rib sometime when they have it.

One of the trays of bbq I think back and drool about is my last visit to Barbs. I came early today and waiting in line as the whole line until about 1hr to open. Even tho I might not had needed to be THIS early, I don’t regret it at all. Today I got All the meats plus 1. Brisket, turkey, ribs, sausage, lamb chops, chicken, and 1 experimental sausage. The brisket here. The flat beats out so many slices of point I think back on tasting around the US. The point here is mind blowing but the lean cut has no business being this good. There is a slight sweetness to the bark that I enjoyed. That or some of the rib glaze got in it hahaha actually thus probably it. Because they are some my favorite of all time. Just the ribs are cooks perfectly. The chili sweet glaze on top of that . . . Perfect. Then the lime zest on top of that. What is above perfect? Godly. What I love about the lamb and turkey is they have a really herby crust. Very refreshing bite each time. Speaking of, the experimental sausage was very herby as well. A really forward flavor of green onions among the various greens. Made me feel like I was eating a salad in meat form lol. Whatever that means but that’s how I feel. It had a high water content but the juices kept my mouth watery between salty bites. I got this sausage for free and said she is still working on it but I would totally pay money for it. The green spaghett is a total must. A creamy sauce with the wonderful poblano peppers a slight tingle of spiciness that envelops the noodles. The pork stew that I might crave every time I’m sick and want something to warm me up. It’s like a warm blanket at your childhood home. Oh and the choco pudding. The Cookie crumble on top adds another element of sweet and salty with a nice crunchy texture from the bits of cookies and pretzels. And the choco pudding is this custard that is not too sweet with a couple bitter notes from the cocoa. It was so good I had to get another but with strawberries instead so I re-waited in line. I preferred the cookie crumble but walking around Lockhart while eating this pudding felt wonderfully relaxing and refreshing with the slices of fruit after that meal.

I recently had the pleasure of visiting Barbs B Q in downtown Lockhart, a place that has quickly asserted itself among the titans of Texas barbecue. This establishment isn’t just serving great food; it’s delivering an experience, which is why it’s a well-deserved Texas Monthly 50 Top BBQ award winner, if not in the top 10.
Located right on the square, the venue is relatively small, which only adds to its charm and the urgency of getting there early. Speaking of which, be prepared for a substantial wait—the line started forming around 10:00 AM on a Saturday! They show genuine hospitality, though, by offering free coffee and beer to those waiting, a thoughtful touch that eases the patience required. Pitmaster Chuck Charnichart and her small team are clearly running a tight ship, proving that quality triumphs over capacity.
Barbs B Q keeps its menu short and simple, focusing on the traditional Texas Trinity with the unique addition of lamb chops. The culinary artistry on display confirms why they were a 2024 James Beard Award finalist for Best New Restaurant and received recognition from the Michelin Guide (including a Bib Gourmand).

The Meats: A Masterclass in Smoke

The barbecue here is truly outstanding, starting with the star:

• Brisket: Without a doubt, this is the best brisket I’ve tasted in a long time. It was heavenly. The bark was perfect, and the tenderness was flawless in both the lean and moist cuts. This brisket easily deserves to be in the Top 10 of all-time.

• Molotov Ribs: These were a fantastic departure from the norm, offering a nice Asian flavor profile. The glaze was great, the bark was perfect, and they had the ideal bite and separation from the bone.

• Jalapeño and Cheddar Sausage: Excellent texture from the double grind, with the cheese oozing out beautifully and a satisfying casing snap. The heat level was just enough to add a pleasant kick without overwhelming the flavor.

• Lamb Chops: The meat itself was good, cooked nicely. However, the spice rub used was not to my personal taste, mainly because I am not a fan of thyme. (A personal preference, not a reflection on the quality of the cook.)

The Sides: Unexpected Culinary Gems

Barbs B Q shines by offering creative and unique sides that elevate the entire plate:

• Green Spaghetti: This was creamy goodness! The spaghetti is mixed with a rich, creamy roasted poblano sauce that delivers nice, unique, and satisfying flavors.

• Pork Stew with Calabacita and Corn: Served over rice, this dish was a burst of flavor. It had wonderful spicy notes balanced perfectly with the corn and squash, all tied together by an excellent cumin flavoring.

I would highly recommend Barbs B Q. Pitmaster Charnichart and her team are producing world-class barbecue and sides that stand out even in a town famous for its smokehouses. They truly deserve their place in Lockhart alongside all the other iconic BBQ destinations.
