That said, the ordering process was tough. We got in line right at 12:00 on a Sunday and didn’t sit down with food until 12:40 — and there were only eight orders ahead of us. Like many BBQ spots, the line feels like a long and somewhat unnecessary process. With a more organized system, they could serve so more people (and make a lot more money) without sacrificing quality.
The food is outstanding — truly. But it would be hard to commit to that line again.
The food we ordered :Brisket, Pork Ribs, Turkey, Green Spaghetti, Pork Stew, Potato Salad, Maxican Chocolate Pudding, cornbread. ALL GOT 100/100! How could you do that? You guys are amazing. Brisket melt in your mouth, pork ribs is exceptional and had secret lime zest, all sides are perfect and completely compliment the meats
The pitmaster – owner was very very sweet, she took time to have light conversations with us. I got to take pics with her too. Another partner (I think) was very nice and proud about their food!
Despite the place is small, the staff were attaintive. They arranged all seatings so that you get seats right away after ordering
To negative people: I don’t understand why people complain about long line, or small place. This is one of the best BBQ experiences in your life. Also making BBQ is a tough job, please open your mind about it.

We decided to get the Tray for two to make it easy and because it was a good deal and included everything we wanted, plus some. Its 1/2 lb of each turkey, brisket, and pork ribs, with 2 sides and a dessert. We got the green spaghetti and upgraded to a bigger size and then the pork stew and the cobbler.
The pork ribs, pork stew, and cobbler are spectacular. Brisket/turkey/green spaghetti are pretty good, in my opinion. The green spaghetti was actually really good leftover too, better than fresh. The only thing I didn’t really care for was the sauce. Its sweet and I didn’t care for the flavors either.
It’s in my top 10 and I’d like to come back and try the beef rib sometime when they have it.

The lamb chops, though, might just steal the show — perfectly seasoned, buttery soft, and melt-in-your-mouth tender. Honestly, they’re the best I’ve ever tasted. And then there’s Barb’s famous green spaghetti — creamy, vibrant, and just the right amount of heat. It’s one of those dishes you can’t stop thinking about long after you’ve left. The creamy & tangy potato salad was equally impressive.
Beyond the food, the service at Barbs BQ is truly impeccable. The staff greet you like old friends, quick with a smile and happy to walk you through the menu. Plates come out hot and fresh, and there’s an easy warmth in how they check on you without hovering — genuine Southern hospitality at its finest.

I recently had the pleasure of visiting Barbs B Q in downtown Lockhart, a place that has quickly asserted itself among the titans of Texas barbecue. This establishment isn’t just serving great food; it’s delivering an experience, which is why it’s a well-deserved Texas Monthly 50 Top BBQ award winner, if not in the top 10.
Located right on the square, the venue is relatively small, which only adds to its charm and the urgency of getting there early. Speaking of which, be prepared for a substantial wait—the line started forming around 10:00 AM on a Saturday! They show genuine hospitality, though, by offering free coffee and beer to those waiting, a thoughtful touch that eases the patience required. Pitmaster Chuck Charnichart and her small team are clearly running a tight ship, proving that quality triumphs over capacity.
Barbs B Q keeps its menu short and simple, focusing on the traditional Texas Trinity with the unique addition of lamb chops. The culinary artistry on display confirms why they were a 2024 James Beard Award finalist for Best New Restaurant and received recognition from the Michelin Guide (including a Bib Gourmand).
The Meats: A Masterclass in Smoke
The barbecue here is truly outstanding, starting with the star:
• Brisket: Without a doubt, this is the best brisket I’ve tasted in a long time. It was heavenly. The bark was perfect, and the tenderness was flawless in both the lean and moist cuts. This brisket easily deserves to be in the Top 10 of all-time.
• Molotov Ribs: These were a fantastic departure from the norm, offering a nice Asian flavor profile. The glaze was great, the bark was perfect, and they had the ideal bite and separation from the bone.
• Jalapeño and Cheddar Sausage: Excellent texture from the double grind, with the cheese oozing out beautifully and a satisfying casing snap. The heat level was just enough to add a pleasant kick without overwhelming the flavor.
• Lamb Chops: The meat itself was good, cooked nicely. However, the spice rub used was not to my personal taste, mainly because I am not a fan of thyme. (A personal preference, not a reflection on the quality of the cook.)
