If you are looking for exceptional service and delicious Vietnamese and Japanese sushi, come check this place out. This place is a hidden gem and is located at a local neighborhood shopping center. The owner turned a formal Rubios Restaurant into a quaint, clean, vibrant restaurant that is spacious and welcoming. Come check it out. I promise you will NOT be disappointed for authentic Pho, Vietnamese cuisine and delicious sushi.

Just tried the new pho and sushi restaurant in town and it was such a pleasant surprise! The sushi was really fresh and nicely presented, and the pho had a rich, flavorful broth that tasted homemade. The service was warm and attentive , making the whole experience even better. A sweet bonus: they gave free ice cream for my kids, which made our little one’s day. Definitely a great spot for both sushi lovers and pho fans — we’ll be coming back for sure!

I decided to see if there was a new-to-us sushi place to try nearby (we normally walk to one near us but it was raining so…) and was pleased to see that Bamboo Pho and Sushi had opened in the former Rubio’s location of Torrey Highlands Village Center. We walked in with zero expectations and were immediately greeted by a friendly face (and familiar, as Sanh, the former owner of Yenchim Garden is friends with the owner and is working a few days a week – guess full retirement didn’t suit him).
They have a pretty extensive menu of both sushi and pho, as well as a few other options like yakisoba and fried rice. We ordered a large shrimp pho which was both huge and very tasty and three sushi rolls – a nice basic spicy tuna, a spider rainbow, and the oddly-spelled tzunami. We were pleasantly surprised that the rolls were each 10 pieces instead of the more typical 6-8, although it meant that it was definitely more food than we needed (we had other bring home a good portion of the pho). The fish was fresh and the only criticism I would have about the sushi is the sauces. I found the spicy mayo on the rainbow spider to be a little mustardy almost and the ponzu on the tzunami roll was a little sweeter than I’m used to it and there was a bit too much of it. Other than that, everything was fantastic and all three of us were happy with our meal and will definitely visit again.
TLDR: generous portions for the price, good flavors, with sauces on sushi being the only thing that could be tempered back a little. Worth another go to try more of the menu and support a local business.

We came here at a Saturday night. It wasn’t busy here and it seems like a new opened place. My husband found it randomly. But the foods is kinda surprised us, we thought they were mainly focused on Vietnamese pho noodles. We ordered sashimi and poke, both are very yummy, fish are fresh and the quantity is good. We hope they can do well and bring more business soon.

PQ, Carmel Valley, 4S people rejoice! Bamboo has fantastic pho! The broth is aromatic with a complex, hearty flavor and is filled with a wide variety of veggies, and accompanied by ample fresh toppings for extra zest and texture. I’m so happy to have found this place! Been here numerous times and they always deliver a superb pho. Friendly management and service team, too.

Ordered sushi and appetizers, and everything was phenomenal! I have a shrimp/shellfish allergy, and they were so thorough and considerate about helping me find rolls I can eat with no cross contamination—which is hard for me to find at a sushi place! Fantastic food, even better service. 10/10
